Noodle Ingredients

  • 1 bundle of store-bought Naengmyeon noodles (chilled or frozen)
  • 4 slices of watermelon (seeds removed)
  • 1/2 Korean melon (seeds removed, thinly sliced)
  • 2-3 cherry tomatoes (halved)
  • A small amount of carrot (thinly julienned)
  • 1 egg (hard-boiled and halved)
  • 1/4 onion (thinly sliced)
  • 1/4 cucumber (thinly julienned, optional)
  • 1/2 Cheongyang chili pepper (seeds removed, finely minced, adjust for spiciness)

Special Bibim Sauce Ingredients

  • 3 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Gochugaru (Korean chili flakes, adjust for spice)
  • 1 Tbsp Soy Sauce
  • 1.5 Tbsp Minced Garlic
  • 2 Tbsp Sugar (adjust for sweetness)
  • 1 Tbsp Maesilcheong (Korean plum extract, for sweetness and flavor)
  • 4 Tbsp Lime Juice (or Lemon Juice, for tanginess)
  • 3 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

If using frozen Naengmyeon noodles, gently thaw them at room temperature or rinse under cold water just before cooking. Chilled noodles can be used immediately.

Step 1

Step 2

Bring a large pot of water to a rolling boil. Carefully add the bundled noodles to the boiling water. Use chopsticks to gently loosen the noodles and stir them so they don’t stick together.

Step 2

Step 3

Boil the noodles for about 1 to 1.5 minutes, or until they become soft and slightly bubbly as the water starts to boil again. Be careful not to overcook, as they can become mushy. Immediately turn off the heat and drain the noodles.

Step 3

Step 4

Rinse the drained noodles thoroughly under cold running water. Gently rub the noodles between your palms and fingers to remove excess starch. This step is crucial for achieving a wonderfully chewy and springy texture. Squeeze out as much water as possible, then shape them into a neat mound in your serving bowl.

Step 4

Step 5

Now, let’s arrange the toppings. Place the seedless watermelon slices, the hollowed-out Korean melon slices, and the halved cherry tomatoes attractively on top of the noodles.

Step 5

Step 6

Lightly sauté the julienned carrots in a pan with a little oil until they are slightly tender. This enhances their texture and flavor. Arrange the sautéed carrots over the other toppings.

Step 6

Step 7

Add the halved hard-boiled egg and the thinly sliced raw onion. For a fresh kick and a bit of heat, add the finely minced Cheongyang chili pepper (if using).

Step 7

Step 8

Generously spoon the prepared Bibim sauce over the noodles and toppings. Finish with a sprinkle of toasted sesame seeds. Mix everything together well before enjoying your delicious homemade Bibim Naengmyeon!

Step 8

Step 9

In a bowl, combine the gochujang, gochugaru, soy sauce, minced garlic, sugar, maesilcheong, lime juice (or lemon juice), and sesame oil. Mix thoroughly until well combined. If the sauce seems too thick, you can add a little more lime juice or water to reach your desired consistency. Letting the sauce sit for a short while allows the flavors to meld beautifully.
