With an abundance of spring vegetables available, try making this delicious beef gochujang stir-fry, perfect for bibimbap! It’s a wonderful way to enjoy the fresh flavors of spring and a fantastic addition to your meal.
Main Ingredients- Minced Beef Tenderloin 200g
- Gochujang (Korean chili paste) 500g
Seasoning Ingredients- 1 Tbsp minced garlic
- 2 Tbsp ginger wine (or cooking wine with a pinch of ginger)
- 1 Tbsp soy sauce
- 1 tsp ground black pepper
- 1/2 Tbsp sugar
- 1 Tbsp olive oil
- 2 Tbsp onion oil
- 1 Tbsp toasted sesame seeds (finely ground)
- 3 Tbsp corn syrup (or rice syrup/oligosaccharide)
- 1 Tbsp minced garlic
- 2 Tbsp ginger wine (or cooking wine with a pinch of ginger)
- 1 Tbsp soy sauce
- 1 tsp ground black pepper
- 1/2 Tbsp sugar
- 1 Tbsp olive oil
- 2 Tbsp onion oil
- 1 Tbsp toasted sesame seeds (finely ground)
- 3 Tbsp corn syrup (or rice syrup/oligosaccharide)
Cooking Instructions
Step 1
First, place the 200g of minced beef tenderloin in a bowl. Add 1 tsp of ground black pepper, 1 Tbsp of minced garlic, and 1 Tbsp of soy sauce. Mix well to ensure the beef is evenly coated with the marinade. This initial marination helps tenderize the beef and build flavor.
Step 2
Next, add 2 Tbsp of ginger wine (which helps to remove any gamey odor and adds a subtle flavor) and 1/2 Tbsp of sugar for a touch of sweetness. Mix everything thoroughly. For best results, cover the bowl with plastic wrap and let it marinate in the refrigerator for at least a day. This allows the flavors to meld beautifully.
Step 3
Prepare to stir-fry the marinated beef. Heat 1 Tbsp of olive oil in a pot or a deep pan over medium heat. Add the marinated beef mixture to the pan.
Step 4
Stir-fry the beef over medium-low heat, breaking it up with a spatula to prevent clumping. Once the beef is cooked through and no longer pink, add the 500g of gochujang. Then, stir in 3 Tbsp of corn syrup (for sweetness and gloss) and 2 Tbsp of onion oil (for added aroma and flavor). Reduce the heat to low, and cook for about 5 minutes, stirring continuously to prevent burning. Finally, add 1 Tbsp of finely ground toasted sesame seeds and simmer for another minute. This completes your delicious beef gochujang stir-fry.
