Cooking Instructions
Step 1
First, prepare the ingredients that will bring freshness and flavor to your bibim guksu: 150g of fresh Chamnamul, 4 fragrant Perilla leaves, and 1 crisp onion. For the chewy Somyeon noodles, about the size of a 500 KRW coin per serving is generally a good portion.
Step 2
1. Wash the Chamnamul and Perilla leaves thoroughly, then pat them dry. Finely shred them into strips about 0.5cm wide. Peel and thinly slice the onion as well. Shredding the vegetables this way will help preserve their fresh taste and satisfying crunch.
Step 3
2. Heat a frying pan over medium-high heat. Add the 200g of Beef Brisket and stir-fry until it’s almost cooked. Then, add 1 tsp of Mirin and 1 tsp of Soy Sauce, and continue to stir-fry until the brisket is fully cooked and nicely coated. This seasoning step will enhance the brisket’s flavor and remove any unwanted gamey odors.
Step 4
3. Bring a generous pot of water to a rolling boil. Add the Somyeon noodles and cook for about 3 minutes. Check the noodles for doneness – they should be cooked but still have a slight bite. Immediately drain the noodles and rinse them thoroughly under cold running water. For an extra-crisp texture, you can rinse them in ice-cold water. Rinsing multiple times helps remove excess starch, ensuring the noodles don’t clump together.
Step 5
4. Now, let’s make the delicious bibim sauce! In a bowl, combine 3 Tbsp Gochujang, 3 Tbsp Sugar, 2 Tbsp Dark Soy Sauce, 1.5 Tbsp Apple Cider Vinegar, 1.5 Tbsp Lemon-Lime Soda, 1/4 tsp Worcestershire Sauce, a pinch of Black Pepper, and a drizzle of Sesame Oil. Stir everything together until the sugar is dissolved and the sauce is well combined. Add the well-cooked Somyeon noodles to this sauce and mix thoroughly. Finally, top generously with the shredded vegetables and the stir-fried beef brisket. Behold your delicious and vibrant Beef Brisket Chamnamul Bibim Guksu, ready to be devoured! Enjoy your meal.
