I made this anchovy stir-fry with gochujang for my husband, who loves it, adding nutrient-rich hemp seeds and garlic for a healthier twist. It’s a delicious way to get omega-3s and other benefits!

Ingredients

  • Medium-sized dried anchovies for stir-frying, 300g (choose ones that are not too small and have a satisfying chew)
  • Garlic slices, 1 handful
  • Grapeseed oil or canola oil, 1 Tbsp
  • Gochujang (Korean chili paste), 3 Tbsp
  • Soy sauce (jin ganjang), 3 Tbsp
  • Cooking wine (mirin), 1 Tbsp
  • Sugar, 1 Tbsp
  • Corn syrup, 1 Tbsp
  • Oligosaccharide, 2 Tbsp
  • Sesame seeds, 1 Tbsp
  • Hemp seeds, 1 Tbsp

Cooking Instructions

To remove moisture and any fishy smell from the anchovies, and to bring out their nutty flavor, lightly toast them in a dry pan over low heat. Stir continuously to prevent burning until they turn a light golden brown. Be careful not to let them get too dark.

Transfer the toasted anchovies to a separate bowl for a moment. Add 1 Tbsp of grapeseed or canola oil to the same pan. Gently sauté the garlic slices until fragrant, then add the toasted anchovies back to the pan. Stir-fry the anchovies and garlic together for another moment until the garlic is lightly golden. Turn off the heat.

Set aside the anchovies and garlic. Now, let’s make the sauce. In the pan, combine 3 Tbsp gochujang, 3 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp sugar, 1 Tbsp corn syrup, and 2 Tbsp oligosaccharide. Place the pan over medium heat and stir until the sauce begins to bubble and thicken.

Once the sauce is bubbling, immediately turn off the heat. Add the pre-fried anchovies and garlic to the sauce. Stir quickly to coat everything evenly. Since the anchovies and garlic were already toasted, they only need a brief toss in the hot sauce to absorb the flavors without becoming soggy.

If you have hemp seeds, now is the time to add them! This is a great way to incorporate these nutritious seeds into your diet effortlessly. If you don’t have hemp seeds, you can omit them or substitute with 1 Tbsp of sesame seeds for added nuttiness.

Portion out some of the stir-fry into a small container for immediate use, and store the rest in a larger container. This way, you can enjoy fresh-tasting anchovy stir-fry whenever you like by refilling the small container from the larger one. It’s a fantastic side dish for any meal!
