  • 2 Tbsp cooking wine (like mirin)
  • 1 Tbsp rice syrup or corn syrup
  • 3 Tbsp honey
  • 2 Tbsp sesame oil
  • 2/3 Tbsp gochujang (Korean chili paste, approx. 10g)
  • 1 Tbsp chopped green onion
  • 2 Tbsp sesame seeds
  • 1 Tbsp minced garlic
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp soy sauce (adjust according to anchovy saltiness)

Cooking Instructions

First, gently pull off the heads and the hard dorsal fins of the anchovies, and remove the intestines (the dark part). If using small anchovies, you can skip this step or just remove the heads and guts from larger ones.

Heat a pan over low heat, then add the prepared anchovies. Stir them continuously to prevent burning, and stir-fry until the anchovies become crispy. This process removes any fishy smell and brings out their nutty flavor.

Place the well-fried anchovies in a sieve and shake off any crumbs or small pieces that fall through. This ensures the seasoning coats the anchovies evenly without clumping, leading to a better taste.

Now, let’s make the key to delicious seasoned anchovies – the seasoning sauce! In a bowl, combine 1 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp chopped green onion, 2 Tbsp sesame seeds, 2 Tbsp gochugaru, and 2 Tbsp sesame oil. Next, add 1 Tbsp rice syrup (or corn syrup) and 3 Tbsp honey for sweetness. Finally, add 2/3 Tbsp gochujang for a spicy kick and 2 Tbsp cooking wine to remove any lingering fishiness and enhance the flavor. Mix everything thoroughly. It’s recommended to adjust the amount of soy sauce based on the saltiness of your anchovies.
