Cooking Instructions
Step 1
First, let’s make the sauce for our delicious Anchovy Gochujang Stir-Fry. In a bowl, combine gochujang, gochugaru, sugar, corn syrup (or oligosaccharide syrup), minced garlic, cooking wine, sesame oil, and toasted sesame seeds. Mix thoroughly with a spoon until well combined. Ensure the sugar and syrup are fully dissolved.
Step 2
Now it’s time to stir-fry the anchovies. Heat a pan over medium heat and stir-fry the small anchovies for about 2 minutes. This step helps to remove any fishy smell and make them crispier. Once the anchovies are lightly fried, reduce the heat to low. Add 2 tablespoons of mayonnaise and quickly stir to coat the anchovies evenly. Mayonnaise will help make the anchovies tender and absorb the sauce better.
Step 3
Wash the green peppers, remove the stems, and thinly slice them. Add the sliced green peppers to the pan with the stir-frying anchovies and cook together briefly. The crisp texture and fresh aroma of the green peppers will further enrich the flavor of the anchovy dish.
Step 4
Pour in the prepared spicy and sweet sauce. Keep the heat on low and continue to stir-fry. Gently mix with a spatula or spoon so that the sauce coats the anchovies and green peppers evenly. It’s important to stir-fry until the sauce thickens, being careful not to burn it.
Step 5
Once the sauce has sufficiently coated the anchovies and they look glossy, turn off the heat. The residual heat will continue to cook them, so stir the anchovies in the pan to ensure they are fully coated with the sauce. This will result in a delicious Anchovy Gochujang Stir-Fry where the anchovies are not broken and are perfectly coated!
Step 6
Transfer the finished Anchovy Gochujang Stir-Fry to a nice serving plate. Sprinkle with toasted sesame seeds for extra nuttiness and visual appeal. Now, enjoy this delicious dish with a bowl of warm rice! 😊
