Main Ingredients- 2 onions, thinly sliced
- 2 handfuls of green onions, roughly chopped
- 1 pack of tofu noodles (store-bought)

Building Sweetness: For a deeper, richer flavor, lightly grease a wide pot with a little cooking oil (optional!). Add the thinly sliced onions and roughly chopped green onions. Sauté over low heat, stirring occasionally, until the onions become translucent and the edges start to turn golden brown. This process, called caramelization, should take about 5-7 minutes and will infuse the dish with a wonderful sweetness. Be careful not to burn them – gentle, slow cooking is key!

Crafting the Spicy Broth: Once the onions and green onions are beautifully sautéed, add enough water to cover the tofu noodles. Bring the water to a boil over medium heat. When the water is bubbling, stir in 4 tablespoons of gochugaru for that signature spicy kick. Add a pinch of umami seasoning to balance the flavors. (You can create your own blend using fish sauce, soy sauce, and a touch of sugar). Stir well to dissolve the chili flakes and let it simmer.
Step 3
The Perfect Finish: As the seasoned broth comes to a rolling boil, carefully add the prepared tofu noodles. Tofu noodles cook very quickly, so let them simmer for just 1-2 minutes. Avoid overcooking, as they can become mushy. Once the noodles are tender and heated through, turn off the heat and serve immediately. For an extra touch, garnish with sesame seeds or chopped green onions.
