Sillim-dong Style Spicy Stir-Fried Sundae: A Flavorful Recipe

Ingredients- 500g Sundae (Korean blood sausage, choose thick or regular style as preferred)
- 200g Beef intestines or tripe (cleaned and prepared)
- 1/4 Cabbage (cut into bite-sized pieces)
- 3 Cheongyang chili peppers (finely chopped for extra heat)
Seasoning- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy sauce
- 1 Tbsp Minced garlic
- 1 Tbsp Perilla seeds powder

Cooking Instructions
Step 1
First, let’s prepare the flavorful sauce for our spicy sundae stir-fry. In a bowl, combine 2 tablespoons of gochujang, 2 tablespoons of gochugaru, 2 tablespoons of soy sauce, and 1 tablespoon of minced garlic. Mix these ingredients thoroughly until you have a well-blended seasoning paste. Preparing this in advance will make the stir-frying process much smoother.
Step 2
The beef intestines or tripe need a little preparation before cooking. While other offal can be cooked directly, it’s best to briefly boil the twisted intestines to remove excess fat and impurities. This step ensures a cleaner taste and a more tender texture. Boil them in water for about 2-3 minutes, then rinse under cold water and drain well.
Step 3
Now it’s time to stir-fry everything! Add the prepared sundae, blanched intestines, roughly chopped cabbage, and finely chopped Cheongyang peppers to a pan. Stir-fry over high heat until the vegetables are slightly softened and all the ingredients are well combined. It’s recommended to add about two-thirds of the prepared sauce at this stage and stir-fry to allow the flavors to meld into the ingredients.
Step 4
Once the ingredients are partially stir-fried, add the remaining seasoning paste and mix everything evenly. Ensure the sauce coats the sundae and vegetables thoroughly. Finally, sprinkle in 1 tablespoon of perilla seeds powder for a nutty and creamy finish, and mix again to distribute it evenly.
Step 5
Continue to stir-fry for another 1-2 minutes after adding the perilla seeds powder, and your delicious stir-fried sundae is ready! Serve immediately while hot. The combination of chewy sundae, crisp vegetables, and the spicy-sweet sauce is truly exceptional. Enjoy this with a chilled glass of soju!
