Cooking Instructions

Prepare all your vegetables and ham. Wash and peel the potatoes, carrot, and onion, then julienne them into thin, long strips (about 0.5cm thick). Cut the ham into similar-sized strips. Finely chop the Cheongyang pepper, removing the seeds if you prefer less heat. (Add it if you like it spicy!).

It’s important to remove the starch from the julienned potatoes. Soak them in cold water for 5-10 minutes, then drain them thoroughly in a colander. If the potatoes are not properly drained, the dish can become sticky when stir-fried.

Heat 2-3 tablespoons of cooking oil in a pan over medium heat. Add the drained potato strips and stir-fry them gently. Once the potatoes start to turn slightly translucent, add the julienned carrots and onions. Stir-fry them together until the vegetables soften and release their natural sweetness. (Tip: If your potatoes and carrots are cut to a similar thickness, you can stir-fry them together from the start. However, since potatoes take slightly longer to cook, stir-frying them separately allows for better control over their texture.)

If you want a spicier dish, add the chopped Cheongyang pepper at this stage and stir-fry briefly. Once all ingredients are well combined, season with salt to your liking.
