Here’s how to make a delightful seasoned young garlic dish! This recipe brings out the fresh, slightly pungent flavor of young garlic, balanced with a sweet and savory sauce, making it a perfect accompaniment to any meal.
Main Ingredients- 1 bunch young garlic (about 100g)
Seasoning- 2 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Soy Sauce
- 2 Tbsp Maesilcheong (plum extract, adjust to taste)
- A pinch of sesame seeds
- A little sesame oil

Cooking Instructions
Step 1
Thoroughly wash the young garlic to remove any dirt, then rinse it several times under running water. Using fresh, crisp young garlic is key for the best flavor.
Step 2
Trim the roots and the very tips of the green stalks, then cut the garlic into bite-sized pieces, about 5-7 cm long. This size makes them easy to eat and ensures the sauce coats them evenly.
Step 3
Bring a pot of water to a rolling boil. We’ll be blanching the young garlic briefly. If you prefer a milder garlic flavor, you can extend the blanching time slightly to soften the pungent aroma.
Step 4
Once the water is boiling vigorously, add the young garlic and blanch for just about 15-30 seconds. Be careful not to overcook, as they can become mushy. Remove them from the boiling water as soon as they appear slightly wilted.
Step 5
Immediately drain the blanched young garlic and rinse them thoroughly under cold running water to stop the cooking process and maintain their crisp texture. Drain them very well after rinsing.
Step 6
Place the drained young garlic in a mixing bowl. Add the seasoning ingredients: Gochujang, soy sauce, and Maesilcheong. *Tip: Adjust the amount of soy sauce based on the saltiness of your Gochujang. If your Gochujang is quite liquidy, you might need less soy sauce. Taste and add more salt or soy sauce if needed. Gently mix the young garlic with the sauce using your hands until well coated.
Step 7
Finally, add the sesame seeds and a drizzle of sesame oil. Toss everything gently one last time. Your delicious seasoned young garlic is ready to serve! It’s a fantastic side dish for warm, steamed rice.
