This is one of those dishes we make often for everyday meals. It’s so simple and delicious that we find ourselves making it even more frequently. When simmered like a stew with perilla leaves and perilla seed powder, it disappears in an instant, leaving nothing behind!

Main Ingredients

  • 1 can Saury (including the liquid)
  • 1/2 Onion
  • 1 Green Onion (Scallion)
  • 1 Red Chili Pepper
  • 20 fresh Perilla Leaves

Seasoning

  • 1 Tbsp Gochugaru (Korean chili powder)
  • 1 tsp Minced Garlic
  • 1/2 tsp Ginger Juice
  • 1 Tbsp Ground Perilla Seeds
  • Pinch of Black Pepper

Cooking Instructions

Step 1

Prepare 1 can of saury. We’ll use the liquid too, which helps to eliminate any fishy smell inherent in canned saury.

Slice 1/2 onion thinly. Cut 1 red chili pepper and 1 green onion into 5cm long strips. Wash the perilla leaves and slice them into 1cm thick ribbons. Don’t be shy with the perilla leaves; adding more will enhance the flavor!

Pour the entire contents of the saury can, including the oil and liquid, directly into a pot. We’re using the natural flavors from the can for a rich base.

Add 1 tablespoon of gochugaru for a pleasant spiciness.

Stir in 1 teaspoon of minced garlic to boost the savory notes.

Add 1/2 teaspoon of ginger juice. This is key to neutralizing any fishy odors. If you don’t have ginger juice, a little finely minced fresh ginger works too.

Season with a pinch of black pepper, just a few shakes, to balance the overall flavors.

Add the prepared green onion, onion, red chili pepper, and perilla leaves to the pot.

Gently mix all the ingredients together. Bring to a simmer over medium heat and cook until the vegetables are tender.

Once the vegetables are cooked through, stir in 1 tablespoon of ground perilla seeds for a nutty, rich flavor. Adding it towards the end preserves its aroma and taste.

After adding the ground perilla seeds, let it simmer for about 5 seconds, then turn off the heat immediately. Overcooking can diminish the fragrant nutty flavor of the perilla seeds. Enjoy this warm and comforting stew!
