Recipe Info

  • Category : Stew
  • Ingredient Category : Pork
  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 2 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Anyone

Main Ingredients

  • 200g thinly sliced pork belly (daeppa samgyeop)
  • 1 medium potato
  • 1 medium onion
  • 1 handful of green onions

Seasoning Ingredients

  • 3 Tbsp doenjang (soybean paste)
  • 2 Tbsp gochujang (red chili paste)
  • 1 Tbsp guk-ganjang (soup soy sauce)
  • Pinch of black pepper

Cooking Instructions

Step 1

First, lightly season the thinly sliced pork belly with black pepper. Then, heat a pan over medium heat and add the pork belly. Begin to stir-fry the meat. This initial step is crucial for developing its savory flavor.

Step 1

Step 2

Continue to stir-fry the pork belly until it releases enough fat and becomes nicely rendered. Be careful not to burn it. This process helps to eliminate any gamey odor and enhances the rich, nutty taste of the pork.

Step 2

Step 3

Prepare the key vegetables for this stew. Peel the potato and cut it into small, bite-sized cubes. Dice the onion roughly as well. These vegetables will absorb the delicious flavors of the stew.

Step 3

Step 4

Add the cubed potatoes to the pan with the rendered pork fat and stir-fry until they start to turn slightly translucent. Once the potatoes show signs of cooking, add the diced onion. Now, add the doenjang, gochujang, guk-ganjang, and black pepper. Stir everything together thoroughly to ensure the seasoning is evenly distributed among the ingredients. Bring the mixture to a simmer and adjust the heat.

Step 4

Step 5

Add the chopped green onions to the stew and let it simmer for a little while longer. The fresh, mild flavor of the green onions will add another layer of complexity to the jjageuli.

Step 5

Step 6

Finally, pour in enough water to just cover the ingredients. Cover the pot with a lid and let it simmer over low heat until the potatoes are completely tender and fall apart easily when poked with a fork. This slow simmering allows the flavors to meld beautifully.
