  • Anchovy-kelp broth 1 teacup (approx. 200ml)
  • Kimchi 1/4 head
  • Perilla oil (Deulgireum) 2 Tbsp
  • Green onion 1 stalk
  • Sugar 1 Tbsp
  • Gochugaru (Korean chili flakes) a pinch (optional, for extra spice)

  • Shiitake mushrooms (sliced)
  • Tofu

Cooking Instructions

Step 1

First, slice the pork neck into bite-sized pieces, about 1cm thick. For the kimchi, cut it into long strips, about 5-6cm, rather than chopping it too finely, so it’s easy to roll with the pork.

Wash the green onion and slice it diagonally, including the white part, about 0.5cm thick. This adds a fragrant aroma and makes the dish visually appealing.

Now, gently shake out the excess filling from the kimchi. Place a slice of pork neck on top of the kimchi and roll them together tightly. Make sure to secure the end of the roll so it doesn’t come undone during cooking.

Heat 2 tablespoons of perilla oil in a deep pot or wok. Arrange the rolled kimchi and pork rolls snugly in the pot. This helps prevent sticking and ensures even cooking.

Pour in 1 teacup (approx. 200ml) of anchovy-kelp broth. You want enough broth to cover about half of the kimchi rolls. Cover the pot and simmer over medium heat for about 20 minutes, until the pork is tender and the kimchi is softened.
