Basic Ingredients- Cheonggukjang (fermented soybean paste) 80g (block or package)
- Well-fermented kimchi 100g
- Ground pork 100g (optional, depending on preference)
- Tofu 1/4 block (firm or stewing type)
- Dried anchovies for broth 5 pieces
- Dried kelp 1 sheet (approx. 5x5cm)
- Water 3 cups (approx. 600ml)
Cooking Instructions
Step 1
First, let’s make the fundamental broth for a delicious stew. In a pot, combine 5 dried anchovies for broth and 1 sheet of dried kelp. Add 3 cups (approx. 600ml) of water. Bring to a simmer over medium heat. Once it boils, remove the kelp after 5-10 minutes, and let the anchovies simmer for another 20-40 minutes to extract a rich broth. Be careful not to boil the anchovies for too long, as it can result in a bitter taste.
Step 2
While the broth is simmering, prepare the ingredients for the stew. If your Cheonggukjang is in a block, mash it with a knife, or use a packaged product as is. Chop the kimchi into bite-sized pieces. Cut the tofu into cubes, suitable for stew. Set aside the ground pork.
Step 3
Add the Cheonggukjang and ground pork to the prepared broth and bring to a boil. Skim off any impurities that rise to the surface as the pork cooks for a clearer broth. Mash the Cheonggukjang well to prevent clumps, then add the kimchi and tofu. Continue to simmer for about 20 more minutes until all the ingredients are well combined and the stew has developed a deep, delicious flavor. For an enhanced taste, you can add chili powder, minced garlic, and chopped green onions according to your preference.
