Ingredients

  • 1 can Gochu-Tuna (spicy tuna with chili) (approx. 150g)
  • 1/2 medium Onion
  • 1 portion Udon noodles (fresh or frozen)
  • 2 Cheongyang peppers (Korean chili peppers)

Cooking Instructions

Step 1

First, gather all your ingredients. Peel and wash the onion thoroughly. Remove the stems from the Cheongyang peppers and rinse them under running water.

Finely mince the washed onion and Cheongyang peppers. Mincing them as finely as possible will result in a better texture when stir-fried. You can adjust the level of spiciness by altering the number of Cheongyang peppers.

Heat a lightly oiled pan over medium-low heat. Add the minced onion and Cheongyang peppers, and sauté until fragrant and the onion becomes translucent. Be careful not to burn them.

Once the vegetables are slightly softened, add the entire can of Gochu-Tuna, including the oil from the can, to the pan. Stir-fry everything together. The oil from the tuna adds a rich flavor and acts as part of the sauce, so don’t discard it.

While the tuna mixture is cooking, boil the udon noodles in a separate pot according to package directions. Once cooked, drain them and rinse under cold water. (Fresh udon usually takes 2-3 minutes, frozen udon 3-4 minutes). Add the drained udon noodles to the pan with the Gochu-Tuna mixture. Stir-fry gently over low heat, allowing the noodles to absorb the flavors. If the mixture seems too dry, add 1-2 tablespoons of the udon cooking water.
