Main Ingredients- 5 Gizzard Shad (Gude) fish
- 3 Korean Cheongyang chili peppers
- 30g Scallions or young green onions
Seasoning Ingredients- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Minced garlic
- 1 Tbsp Roasted soybean powder
- 1 Tbsp Toasted sesame seeds (Gomul)
- 5 Tbsp Gizzard Shad Jeotgal brine (liquid from the fermented fish)
- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Minced garlic
- 1 Tbsp Roasted soybean powder
- 1 Tbsp Toasted sesame seeds (Gomul)
- 5 Tbsp Gizzard Shad Jeotgal brine (liquid from the fermented fish)
Cooking Instructions
Step 1
First, thoroughly clean the fresh gizzard shad. Remove the head and tail, then discard them.
Step 2
Using kitchen scissors, carefully trim off the dorsal and ventral fins from the fish. This makes the final dish cleaner and easier to eat.
Step 3
Debone the cleaned gizzard shad and cut the flesh into small, bite-sized pieces, approximately 1cm squares. Place the cut fish into a bowl.
Step 4
Finely mince the Cheongyang chili peppers, removing the seeds if you prefer less heat. Wash and thinly slice the scallions.
Step 5
To the bowl containing the gizzard shad, add all the seasoning ingredients: gochugaru, minced garlic, soybean powder, and the gizzard shad jeotgal brine. Be mindful that the jeotgal brine can be salty; start with less and add more to taste.
Step 6
Add the minced chili peppers and sliced scallions to the bowl. Mix everything thoroughly until the seasonings are evenly distributed throughout the fish. Finally, sprinkle with toasted sesame seeds for a nutty finish.
Step 7
Transfer the finished gizzard shad jeotgal ssamjang to a serving dish. This flavorful sauce is delicious served with warm rice and fresh lettuce wraps!
