  • 5 Tbsp kimchi (chopped into bite-sized pieces)
  • 4 Tbsp seasoned dried anchovies (lightly chopped)
  • 15 pieces carrot (thinly julienned)
  • 1/6 onion (thinly julienned)
  • 5 oyster mushrooms (trimmed and sliced or torn)
  • 4 Tbsp flour (all-purpose or pancake mix)
  • 1 fresh egg
  • 1 chili pepper (deseeded and finely minced)

Let’s start by preparing the vegetables. Trim any yellow or wilted leaves from the chives, wash them thoroughly under running water, and pat them dry. Cut them into 2-3 cm lengths. Thinly julienne the carrot and onion. Prepare the oyster mushrooms by removing the tough ends and then slicing or tearing them into bite-sized pieces. Finely mince the chili pepper after removing the seeds for a touch of heat. Combine all prepared vegetables in a large bowl.
