Ingredients- 300g well-fermented kimchi, chopped
- 1 can (approx. 150g) tuna in oil, drained
- 1/4 onion, thinly sliced
- A small amount of green onion, sliced
- 500g beef bone broth (or store-bought beef bone soup, ramen broth base, beef bouillon cubes)
Seasoning (Spoon measurements)- 2 Tbsp sesame oil
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 0.5 Tbsp red pepper flakes (gochugaru)

Cooking Instructions
Step 1
Start by building flavor: Heat 2 tablespoons of sesame oil in a pot over medium-low heat. Add the kimchi, cut into bite-sized pieces, and 1 tablespoon of sugar. The sugar helps balance the sourness of the kimchi and adds a touch of sweetness.
Step 2
Sauté the kimchi for about 3 minutes over medium-low heat, stirring occasionally to prevent burning. This step is crucial for developing the deep flavor of the kimchi.
Step 3
A key tip for achieving restaurant-quality broth is to add sliced onion! Thinly slice 1/4 of an onion. The onion will lend a subtle sweetness and depth to the stew’s broth.

Add the sliced onion to the pot with the kimchi and continue to sauté for another minute over medium-low heat until the onion becomes slightly translucent.

Now for the secret ingredient that makes it taste like it’s from a restaurant: beef bone broth! You can use store-bought beef bone soup, a base from beef-flavored ramen noodles (like ‘Sari Gomtang’), or beef bouillon cubes. Add 500g of the broth to the pot. This rich broth will make the stew incredibly savory and satisfying.

Add 1 tablespoon of minced garlic and 0.5 tablespoon of red pepper flakes for a touch of spice. Then, add the drained can of tuna. Bring the stew to a gentle simmer over medium-low heat, cover, and cook for about 10 minutes until all the flavors have melded beautifully. Note: You can substitute the tuna with spam or pork for a different, but equally delicious, variation!
