Spicy and Rich Saury Kimchi Stew (Saury Kimchi Jjigae)

Main Ingredients- 1/4 head of well-fermented kimchi (aged kimchi is highly recommended!)
- 1 can of saury (using the oil can make it even more delicious!)
- 1 stalk of green onion
- 1 Korean chili pepper (use 2 if you like it extra spicy)
Seasoning and Broth- 1 Tbsp gochugaru (Korean chili flakes)
- Pinch of black pepper (a few twists)
- 1/2 Tbsp sugar (balances the sourness of the kimchi!)
- 3 Tbsp cooking wine (like Mirin) (excellent for removing saury’s fishy odor!)
- 4 cups water (approx. 700ml)
- 1 Tbsp gochugaru (Korean chili flakes)
- Pinch of black pepper (a few twists)
- 1/2 Tbsp sugar (balances the sourness of the kimchi!)
- 3 Tbsp cooking wine (like Mirin) (excellent for removing saury’s fishy odor!)
- 4 cups water (approx. 700ml)
Cooking Instructions
Step 1
First, finely chop the well-fermented kimchi into bite-sized pieces. Place all the chopped kimchi into a pot. Add about 3 small ladlefuls of kimchi juice. If you don’t have enough kimchi juice, you can add a little water.
Step 2
Now, add the canned saury to the pot, including its oil. This helps to remove any fishy smell and adds more savory flavor. Add all the prepared seasoning ingredients: gochugaru, black pepper, sugar, and cooking wine. Pour in about 4 cups of water (using a paper cup as a measure). (The photo is missing the gochugaru, but it’s essential for that spicy kick!)
Step 3
Cover the pot and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer gently. It’s best to simmer for about 15 minutes until the kimchi is tender and the broth’s flavor deepens. While it simmers, thinly slice the green onion diagonally and finely chop the Korean chili pepper.
Step 4
When the kimchi is sufficiently cooked and the broth has developed its flavor, add the prepared green onion and Korean chili pepper, and simmer for a little longer. The aromatic flavors of the onion and pepper will make it even more delicious. Turn off the heat and enjoy your finished stew!
