Main Ingredients- Pork neck 100g
- Well-fermented kimchi 150g
- Tofu 1/4 block
- Rice cake soup slices 6 pieces
- Onion 1/2
- Green onion 1 stalk
- Korean green chili pepper 1
Seasonings and Broth- Rice water 600ml
- Gochugaru (Korean chili flakes) 1 Tbsp
- Sugar 1.5 Tbsp (adjust based on kimchi’s sourness)
- Guk-ganjang (soup soy sauce) 1 Tbsp
- Minced garlic 0.5 Tbsp
- Salted shrimp paste 0.5 Tbsp
- Doenjang (soybean paste) 0.5 Tbsp
- Rice water 600ml
- Gochugaru (Korean chili flakes) 1 Tbsp
- Sugar 1.5 Tbsp (adjust based on kimchi’s sourness)
- Guk-ganjang (soup soy sauce) 1 Tbsp
- Minced garlic 0.5 Tbsp
- Salted shrimp paste 0.5 Tbsp
- Doenjang (soybean paste) 0.5 Tbsp
Cooking Instructions
Step 1
Gently pat dry the pork neck with a paper towel to remove excess blood. Then, cut it into bite-sized pieces. (Feel free to use leftover pork.)
Step 2
In a pot, combine 600ml of rice water and 0.5 Tbsp of doenjang. Add the cut pork neck and bring to a boil over high heat. This step helps remove any gamey smell from the pork and adds depth to the broth.
Step 3
While the pork is boiling, skim off any impurities or foam that rise to the surface with a spoon. This ensures a clear and refreshing stew.
Step 4
Add the prepared kimchi to the pot, along with some of the kimchi juice to enhance the sour flavor. Adjust the amount of kimchi to your preference.

Now, let’s add the seasonings for a delicious kimchi stew. Stir in 1 Tbsp of gochugaru and 1.5 Tbsp of sugar. If your kimchi is very sour, you can add a little more sugar to balance the taste.
