Pork Kimchi Stew Ingredients

  • 180g Pork (shoulder or belly recommended)
  • 1/2 Onion
  • 1/2 Green Onion (Scallion)
  • 1/2 block Tofu
  • 1/2 Tbsp MSG (for enhanced umami, optional)
  • Pinch of Salt (to taste)
  • 900mL Rice Water (or Anchovy-Kelp Broth)

Kimchi Stir-fry Seasoning

  • 3 Tbsp Gochugaru (Korean chili powder)
  • 1 Tbsp Guk-ganjang (Korean soup soy sauce)
  • 1 Tbsp Minced Garlic
  • Pinch of Black Pepper

Cooking Instructions

In a pot for the stew, generously add cooking oil. Then, add the kimchi (cut into bite-sized pieces), 1 Tbsp Guk-ganjang, 1/2 Tbsp minced garlic, and a pinch of black pepper. Sauté over medium heat for about 3 minutes. Stir-frying the kimchi first softens it and brings out its savory flavor.
