Spicy and Rich Pork Kimchi Stew: Quick Recipe with Dashida
No Broth Needed! Easy Pork Kimchi Stew with Beef Dashida
This recipe for Pork Kimchi Stew uses Dashida, perfect for busy individuals or small households who find making broth difficult. Enjoy a rich and flavorful stew without the fuss!
Ingredients- 300g Pork (neck or belly, suitable for stew)
- 2 handfuls of well-fermented Kimchi (approx. 200g)
- 1 stalk of Green Onion (approx. 15cm long)
- 1 Tbsp Minced Garlic
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy Sauce
- 1 Tbsp Beef Dashida (or similar beef bouillon powder)
Cooking Instructions
Step 1
First, prepare the green onions which will add flavor to the stew. Chop the green onions into large, diagonal pieces, about 1.5-2cm thick. Cutting them too thinly might cause them to break apart during cooking, so generous cuts are recommended.
Step 2
Cut the kimchi into bite-sized pieces, small enough to fit easily in one mouthful. If the kimchi pieces are too large, it can be inconvenient to eat the stew.
Step 3
Heat a pot over high heat and add the pork. Stir-fry the pork until it’s lightly browned and has released some of its fat. Stir-frying the pork sufficiently at this stage helps reduce any gamey odors and enhances its savory flavor.
Step 4
Once the pork is partially cooked, add the chopped kimchi to the pot. Stir-fry them together for about 1-2 minutes to allow the kimchi and pork flavors to meld.
Step 5
Now it’s time to add water for the stew. Pour in enough water to fully cover the kimchi, approximately 3-4 cups (600-800ml), excluding any kimchi juice. You can adjust the amount of water based on the saltiness of your kimchi and your preference for broth volume.
Step 6
Add all the seasonings to enhance the flavor. Include 1 Tbsp minced garlic, 2 Tbsp gochugaru, 2 Tbsp soy sauce, and our star ingredient, 1 Tbsp beef Dashida. Give it a quick stir to help the Dashida dissolve into the broth.
Step 7
Once the stew comes to a rolling boil, reduce the heat to medium. Add the prepared large chunks of green onion, cover the pot, and let it simmer gently for about 20 minutes. This simmering time allows the flavors of the kimchi and pork to deeply infuse into the broth.
Step 8
After 20 minutes, check if the kimchi is tender and the broth is richly flavored. Your delicious stew is ready! Taste and adjust seasoning with salt or soy sauce if needed. Enjoy this hearty stew with a bowl of warm rice!
