Spicy Pork Kimchi Stew- Pork (neck or shoulder cut) 150g
- Well-fermented Kimchi 1/8 head
- Water 4 cups (800ml)
- Green onion 1/2 stalk
- Red chili pepper 1
- Green chili pepper 2
- Black pepper to taste
Sweet and Savory Stir-fried Pork Belly with Vegetables- Pork belly slices (thinly sliced) 200g
- Pumpkin/Kabocha squash 1/6 small
- Cabbage 3 leaves
- Red chili pepper 1
- Green chili pepper 1
- Green onion 1/2 stalk
- Minced garlic 1 Tbsp
- Oyster sauce 1 Tbsp
- Honey 1 Tbsp
- Sesame seeds to taste
- Pork belly slices (thinly sliced) 200g
- Pumpkin/Kabocha squash 1/6 small
- Cabbage 3 leaves
- Red chili pepper 1
- Green chili pepper 1
- Green onion 1/2 stalk
- Minced garlic 1 Tbsp
- Oyster sauce 1 Tbsp
- Honey 1 Tbsp
- Sesame seeds to taste
Cooking Instructions
Step 1
Let’s start the Kimchi Stew. In a pot, add the pork, cut into bite-sized pieces, and well-fermented kimchi. Stir-fry over high heat until the pork is partially cooked and the kimchi’s sourness has mellowed. Then, pour in 4 cups of water and bring it to a boil.
Step 2
Once the kimchi stew comes to a boil, reduce the heat to medium-low. Add a pinch of black pepper to remove any gamey odor. Next, add the diagonally sliced green onion, red chili pepper, and green chili pepper, and simmer for a bit longer to enhance the spicy and refreshing flavor. Taste the stew and adjust seasoning with salted shrimp or soy sauce if needed.
Step 3
Transfer the finished kimchi stew to an earthenware pot (ttukbaegi) for serving. This will keep the stew hot for a longer time, allowing you to enjoy it at its best.
Step 4
Now, let’s prepare the Stir-fried Pork Belly with Vegetables. For the pumpkin, remove the seeds and slice it thinly. Microwave it for about 2-3 minutes until tender. Cut the cabbage into thick shreds. Slice the red and green chili peppers diagonally, and cut the green onion into long pieces.
Step 5
Heat a pan over medium-high heat. Add the minced garlic and thinly sliced pork belly, and stir-fry until the garlic is golden and the pork belly renders its fat. Then, add the microwaved pumpkin and shredded cabbage, and stir-fry together until the vegetables are slightly tender.
Step 6
Once the vegetables are somewhat cooked, add 1 Tbsp of oyster sauce for an umami boost. Add the long-cut green onion and chili peppers, and stir-fry until fragrant. You can adjust the seasoning with soy sauce or salt according to your preference, in addition to the oyster sauce.
Step 7
Finally, add a sprinkle of sesame seeds and 1 Tbsp of honey. Stir-fry quickly until everything is glossy and well combined. The honey adds sweetness and shine, while the sesame seeds provide a nutty aroma and flavor.
