Main Ingredients

  • 200g pork for Japchae (thinly sliced pork belly or shoulder)
  • 1/4 head cabbage, roughly chopped
  • 1 onion, roughly chopped
  • 1 bunch baby bok choy, trimmed
  • 1/2 zucchini, cut into half-moons
  • 1 Tbsp minced garlic
  • 1 Tbsp grated ginger (or 1/2 tsp minced ginger)
  • 1 handful of scallions or green onions, cut into large pieces
  • 3 Korean red chili peppers (cheongyang), thinly sliced diagonally (adjust for spice)
  • 1 handful of glass noodles (approx. 50g), pre-boiled for 6 minutes
  • 2 squid, cleaned, scored, and cut into bite-sized pieces

Seasoning and Broth

  • 2/3 cup gochugaru (Korean chili flakes, approx. 60g)
  • 1/2 cup gochugaru oil (Korean chili oil, approx. 100ml)
  • 3 Tbsp chicken stock (or seafood stock)
  • 2 Tbsp oyster sauce
  • 1 Tbsp soy sauce for seasoned soup (or regular soy sauce)
  • 3 Tbsp cooking wine (mirin or rice wine)
  • 1 Tbsp black pepper (or to taste)
  • 1 tsp sugar (adjust for sweetness)
  • 5-6 cups anchovy-kelp broth (or water)
  • A little cooking oil (if needed)

Cooking Instructions

Step 1

First, marinate the 200g of pork with 1 Tbsp chicken stock, 1 Tbsp cooking wine, and a pinch of black pepper. (Tip: Mixing in some ground pork can add a richer texture.)

Prepare the 2 squid by scoring the inside of the bodies with diagonal cuts, then slice them into bite-sized pieces.

Prepare 5-6 cups of anchovy-kelp broth to add depth to the Jjamppong soup. (Tip: You can also use store-bought broth or seafood stock.)

In a deep pot or wok, heat 1/2 cup of gochugaru oil over low heat. Add the 1 Tbsp of grated ginger and sauté until fragrant.

Once the ginger is fragrant, add 1 Tbsp of minced garlic and stir-fry until the garlic releases its aroma.

Add the marinated pork and stir-fry over medium-high heat. If you have a kitchen torch, lightly char the pork for an added smoky flavor. (If not, stir-fry quickly over high heat.)

Add the roughly chopped scallions or green onions and stir-fry for about 1 minute until aromatic.

Now, add the chopped cabbage, onion, zucchini, and sliced squid to the pot. Generously add 2/3 cup of gochugaru and stir-fry everything together until the vegetables are slightly wilted and coated with chili flakes.

Add a little more cooking oil if needed. Pour in the seasoning mixture (3 Tbsp chicken stock, 2 Tbsp oyster sauce, 1 Tbsp soy sauce, 3 Tbsp cooking wine, 1 tsp sugar, 1 Tbsp black pepper) and stir-fry with the ingredients for another 2-3 minutes. Again, using a kitchen torch here can enhance the smoky flavor.

Pour in the prepared 5-6 cups of anchovy-kelp broth and bring to a boil over high heat. Once boiling, reduce to medium heat and let it simmer to allow the flavors to meld.

Taste the broth and add salt if necessary to adjust the seasoning. (The oyster sauce and soy sauce provide considerable saltiness, so season carefully.)

When the broth is vigorously boiling and the vegetables are tender, add the prepared baby bok choy and diagonally sliced chili peppers. Boil for just another minute or so, and your delicious Jjamppong soup is ready.

To serve, place the pre-boiled glass noodles (about 6 minutes of boiling) into a serving bowl and ladle the hot Jjamppong soup over them for a hearty Jjamppong soup experience. Alternatively, you can boil Chinese noodles (like ramen or udon) and add them to the soup for a full Jjamppong noodle dish.
