Easy Homemade Tuna Kimchi Stew Recipe
As the cool weather approaches, stews are always a welcome thought! How about making a kimchi stew with simple ingredients readily available at home? This recipe is perfect for a quick and delicious meal.
Main Ingredients- 1/2 head aged kimchi (approx. 300g)
- 1 can tuna (150g)
- 1/2 stalk green onion (generous amount)
Seasoning Ingredients- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
- 2.5 cups water (approx. 500ml)
- 2 Tbsp tuna extract (or soy sauce for soup)

Cooking Instructions
Step 1
Rinse the kimchi and gently squeeze out excess water. Cut the kimchi into bite-sized pieces, about 2-3cm, using scissors. This size is good for eating directly from the pot.

In a bowl, add 1 Tbsp of sugar to the cut kimchi and mix well. Sugar helps to mellow out the sourness of the kimchi and enhances its savory flavor.
Step 3
Drain most of the oil from the tuna can and add it to the kimchi. Mix them together. Leaving a little bit of tuna oil can add depth to the broth.
Step 4
Transfer the seasoned kimchi and tuna to a pot and stir-fry over medium heat. This sautéing step is crucial for developing a richer flavor in the kimchi stew.
Step 5
Once the kimchi starts to soften slightly, pour in 2.5 cups (approx. 500ml) of water. Adjust the amount of water based on how much liquid you prefer and the ripeness of your kimchi. The goal is to have the kimchi mostly submerged but not overflowing with liquid.

Add 1 Tbsp of minced garlic and stir to combine. The pungent aroma of garlic will further enrich the stew’s taste.

Add 1 Tbsp of gochugaru for a pleasant spiciness. You can increase this amount if you prefer a spicier stew.

Stir in 2 Tbsp of tuna extract for an extra layer of umami. You can substitute this with soy sauce for soup, and adjust the seasoning to your liking.

Add a pinch of black pepper, if desired. Pepper adds a fragrant note that balances any richness and enhances the overall flavor.

Once all ingredients are mixed, cover the pot and simmer over medium-low heat for 10-15 minutes. This allows the kimchi to become tender and the flavors to meld beautifully. Listen for that delightful bubbling sound!
