Basic Ingredients- 1 fresh squid (use both body and tentacles)
- 100g radish (about 1/4 of a small one)
- 100g soybean sprouts
- 3 cups anchovy-kelp broth
- 1/3 cup water
- 1 tablespoon doenjang (fermented soybean paste)
- 1 tablespoon gochugaru (Korean chili flakes)
- 1 tablespoon saeu-jeot (fermented shrimp) with its brine
- 1 tablespoon minced garlic
- 15g chives (a small handful)
Cooking Instructions
Step 1
First, clean and prepare the squid, then cut it into bite-sized pieces (about 2-3cm wide). Julienne the radish into approximately 0.5cm thick strips. Rinse the soybean sprouts thoroughly under running water and drain. Chop the chives finely. (Optional: For added color, thinly slice half a red chili pepper diagonally and add it.)
Step 2
In a pot, combine anchovies and kelp to make a rich broth. Once the broth is ready, remove the solids. Add the julienned radish and rinsed soybean sprouts to the broth and boil until the radish becomes translucent and the sprouts are cooked. This step allows the refreshing flavors of the vegetables to infuse the soup.
Step 3
In a small bowl, mix 1 tablespoon of doenjang with 1/3 cup of water until smooth. Straining the well-mixed doenjang through a fine-mesh sieve will result in a clearer soup. Add this prepared doenjang mixture to the boiling broth.
Step 4
Now, add the prepared squid, 1 tablespoon of minced garlic, 1 tablespoon of gochugaru, and 1 tablespoon of saeu-jeot to the pot. Boil for another short while. Finally, add the chopped chives (and red chili pepper, if using) and simmer briefly. Your spicy and refreshing squid soup is now complete! Taste and adjust the seasoning with more saeu-jeot or soup soy sauce if needed.
