Main Ingredients

  • 1 Squid (body only, cleaned and cut into bite-sized pieces)
  • 1/5 Korean Radish (approx. 200g, thinly sliced)
  • 1 stalk Green Onion (sliced diagonally)
  • 1 Red Chili Pepper (sliced diagonally)
  • 1 Green Chili Pepper (optional, sliced diagonally)
  • 1 piece Dashima Pack (or anchovies, kelp, dried shrimp for broth)

Seasoning

  • 1 Tbsp Soy Sauce (or regular soy sauce)
  • 1/2 Tbsp Minced Garlic
  • 1/2 Tbsp Salt (or to taste)

Cooking Instructions

Step 1

First, prepare all the ingredients for the squid and radish soup. Clean the squid and cut it into bite-sized pieces. Thinly slice the Korean radish and diagonally slice the green onions and chili peppers. If you don’t have a dashima pack, prepare anchovies, kelp, and dried shrimp to make the broth.

Pour 800ml of water into a pot and add 1 dashima pack. Simmer for about 10 minutes to create a delicious broth. If using anchovies, kelp, and dried shrimp instead of a dashima pack, boil them for a similar amount of time to extract a deep flavor. Once the broth is ready, remove the dashima pack.

Add the thinly sliced radish to the pot where you made the broth.

Add 1 tablespoon of soy sauce and stir-fry the radish over high heat until slightly browned. This process brings out the radish’s sweetness and makes the soup broth richer and cleaner. Stir-fry for about 1-2 minutes.

Pour all the prepared broth over the stir-fried radish and bring it to a rolling boil over high heat. Continue to boil until the radish becomes translucent and tender.

Once the radish is sufficiently cooked, add the diagonally sliced chili peppers (red and green), green onion, and minced garlic. Then, add the prepared squid. Squid can become tough if overcooked, so boil it for only about 2-3 minutes after adding it. Taste the soup and season with 1/2 tablespoon of salt as needed. (For a cleaner taste, use salt; for a richer, more savory broth, add more soy sauce to adjust the seasoning).
