This is a squid and bean sprout soup that you can easily and quickly make with ingredients you already have at home. Thanks to the umami-rich flavor extracted from the squid and bean sprouts, you can enjoy a deep and refreshing broth without needing to make a separate stock. Its spicy kick will stimulate your appetite, making you want to finish a whole bowl of rice in no time!
Main Ingredients- 1 Squid
- 120g Bean Sprouts
- 1/2 block Firm Tofu
- 1200ml Water (6 cups)
- 1/2 stalk Green Onion
- 2 Cheongyang Peppers (Korean chili peppers)
- 1 Red Chili Pepper
Seasoning Ingredients- 0.5 Tbsp Minced Garlic
- 0.5 Tbsp Dried Shrimp Powder (optional, enhances umami)
- 0.5 Tbsp Gochujang (Korean chili paste)
- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soup Soy Sauce (Gukganjang)
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 2 Tbsp Mirin (Cooking Rice Wine)
- Pinch of Salt
- Pinch of Black Pepper
- 0.5 Tbsp Minced Garlic
- 0.5 Tbsp Dried Shrimp Powder (optional, enhances umami)
- 0.5 Tbsp Gochujang (Korean chili paste)
- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soup Soy Sauce (Gukganjang)
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 2 Tbsp Mirin (Cooking Rice Wine)
- Pinch of Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare all the ingredients for the dish. This is the first step towards a neat and tidy cooking process!
Step 2
Clean the squid and cut it into bite-sized pieces, keeping the skin on. Dice the tofu into approximately 1.5cm cubes. Finely slice the green onion, Cheongyang peppers, and red chili pepper. You can remove the seeds from the chili peppers to adjust the spiciness.
Step 3
In a pot, add the washed bean sprouts and 1200ml (6 cups) of water. Cover the pot and bring to a boil over high heat for about 5 to 7 minutes, until the bean sprouts are cooked. Then, open the lid and add the prepared squid.
Step 4
Now it’s time to add the seasoning ingredients. Add 0.5 Tbsp minced garlic, 0.5 Tbsp dried shrimp powder (if you don’t have it, you can skip it, but it adds more umami!), 0.5 Tbsp gochujang, and 1.5 Tbsp gochugaru. Stir well to dissolve the seasonings.
Step 5
Add the diced tofu. Once the soup comes to a boil again, reduce the heat to medium-low and simmer for another 5 minutes. Simmering like this allows the tofu to absorb the flavorful broth, making it even tastier.
Step 6
Finally, add 2 Tbsp soup soy sauce, 1 Tbsp fish sauce, and 2 Tbsp mirin. Taste the soup and adjust the seasoning with salt if needed. Add the sliced green onion, red chili pepper, and Cheongyang peppers and boil for another moment to bring out the spicy flavor.
Step 7
Just before turning off the heat, sprinkle in a pinch of black pepper for added aroma and stir gently to finish. Your refreshing and spicy squid and bean sprout soup is ready!
Step 8
Tip: The tofu adds a refreshing depth to the broth and improves the texture, but it’s optional. If you want to add a refreshing taste instead of tofu, thinly sliced radish simmered in the soup is also delicious. You can also add mushrooms or other vegetables according to your preference.
