A wonderfully simple mushroom stew using shiitake mushrooms. This dish is quick to make and packed with the earthy flavor of shiitake.

Main Ingredients

  • 10 shiitake mushrooms (fresh or rehydrated dried)
  • 1/2 stalk of green onion (mostly white part)
  • 500ml water (about 2.5 cups)
  • 1 piece of dried kelp (about 10×10 cm)

Cooking Instructions

Remove the tough stems from the shiitake mushrooms and wipe them clean. Slice the mushroom caps into 3-4 pieces, or thinly julienne them. This helps the mushroom flavor infuse better into the broth and makes them easier to eat. (If using dried shiitake mushrooms, soak them in water until rehydrated before use.)

Cut the green onion into approximately 3-4 cm lengths. While both the white and green parts can be used, the white part contributes a cleaner, refreshing flavor that is excellent for stews.

Slice the cut green onion into 2-3 pieces at an angle. This helps the refreshing onion flavor to meld into the broth beautifully, and makes it easy to enjoy with the mushrooms.

Prepare a pot and add the 500ml of water, the cut green onion, and the prepared shiitake mushrooms. Bring this to a boil over high heat. You’ll soon start to smell the wonderful aroma from the mushrooms and onions.

Once the water boils, reduce the heat to medium. Add the piece of kelp, 0.5 Tbsp gochugaru, 1 Tbsp soy sauce, 1 Tbsp tuna extract, and 0.5 Tbsp minced garlic. Stir gently to combine all the ingredients, then cover partially and simmer for about 5 minutes. During this time, the umami from the shiitake mushrooms will meld with the seasonings to create a rich broth. Remove the kelp after 5 minutes for a cleaner taste.
