  • 100ml kimchi brine
  • 0.5 Tbsp minced salted shrimp

Prepare all the ingredients for a delicious Kimchi Fish Cake Soup. If you don’t have aged kimchi, regular napa cabbage kimchi can be used, but aged kimchi will result in a deeper and more pungent broth flavor.

Briefly blanch the square fish cakes in boiling water to remove any excess oil. Then, cut them into bite-sized pieces (about 2-3 cm wide). Blanching them first helps to remove any unwanted odor and improves their texture.

Lightly shake off the filling from the aged kimchi and chop it into pieces similar in size to the fish cakes. If there’s too much seasoning from the kimchi, the broth might become cloudy, so it’s good to shake some off.

Pour 1.2 liters of water into a pot, add 2 coin stock cubes, and bring to a boil. Once boiling, add the chopped aged kimchi and about 100ml of kimchi brine. If coin stock cubes are unavailable, you can use anchovy-kelp broth or other stocks.

After adding the kimchi, boil vigorously over high heat for about 10 minutes to allow the kimchi flavor to fully infuse into the broth. The kimchi will soften, and the broth will gain a nice spicy kick.
