- 1/4 head of aged kimchi (or well-fermented kimchi)
- 700ml broth (anchovy-kelp broth or rice water)

The combination of aged kimchi and crisp bean sprouts creates a deep and clean flavor. Let’s start making this simple yet incredibly delicious soup!

First, rinse the bean sprouts thoroughly under running water and drain them in a colander. For the kimchi, remove as much of the filling as possible and set it aside separately; we’ll only use the kimchi itself. You don’t need to squeeze the kimchi juice out. Just chop the kimchi finely. Finely chop the cheongyang pepper to add some heat, and slice the green onion diagonally.

Pour the 700ml of prepared broth into a pot and add the chopped kimchi. The kimchi will soften and release its refreshing flavor into the soup. Now, add 1 tablespoon of gochugaru for color and spice. Season with 1 tablespoon of soy sauce for soup or salt to start (adjust the salt based on how salty your kimchi is). Stir everything together to combine and bring to a boil over high heat.
