Main Ingredients- Beef (lean cut) 500g
- Radish (small) 1 (approx. 500g)
- Bean sprouts 400g
- Minced garlic, generous amount
- Shiitake mushrooms 5
- Dried kelp (10cm x 10cm) 1 sheet
- Green onions, 2 handfuls (chopped)
Beef Marinade Ingredients- Soy sauce 5 Tbsp
- Fish sauce 2 Tbsp
- Minced garlic 1 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Black pepper 1 tsp
Seasoning Paste (Dadersi) Ingredients- Soy sauce 5 Tbsp
- Red pepper flakes 8 Tbsp
- Fish sauce 1 Tbsp
- Soy sauce 5 Tbsp
- Fish sauce 2 Tbsp
- Minced garlic 1 Tbsp
- Cooking wine (Mirin) 2 Tbsp

Cooking Instructions
Step 1
First, cut the 500g of beef into bite-sized pieces (about 3-4cm). Pat dry any excess blood with a paper towel. In a bowl, combine the beef with the ‘Beef Marinade Ingredients’: 5 Tbsp soy sauce, 2 Tbsp fish sauce, 1 Tbsp minced garlic, 2 Tbsp cooking wine (mirin), and 1 tsp black pepper. Gently mix and let it marinate for about 10 minutes. Marinating the beef will make it more tender and flavorful.
Step 2
Peel and thoroughly wash the small radish (approx. 500g). Slice it into thin, half-moon shapes, about 0.3-0.5cm thick. Slicing it too thinly might cause it to break apart while cooking, so aim for a moderate thickness.
Step 3
Add the marinated beef to a pot and stir-fry over medium heat until it’s browned and fragrant. Searing the beef first brings out its rich flavor.
Step 4
Once the beef is partially cooked, add the sliced radish to the pot and stir-fry until the radish becomes slightly translucent. This step helps to draw out the natural sweetness from the radish, making the soup broth more refreshing.

Pour 14 cups (approx. 2.8 liters) of water into the pot with the stir-fried beef and radish. Add 5 dried shiitake mushrooms and 1 sheet of dried kelp (10x10cm). These ingredients will add depth and umami to the broth as it simmers.

Let’s prepare the ‘Seasoning Paste (Dadersi)’ which is key to the soup’s spicy kick. In a small bowl, combine 5 Tbsp soy sauce, 8 Tbsp red pepper flakes, and 1 Tbsp fish sauce. Mix well. You can adjust the amount of red pepper flakes to your preference.
Step 7
Bring the soup to a rolling boil over high heat. Once boiling, reduce the heat to medium. Skim off any foam or scum that rises to the surface with a ladle. This will ensure a clear and clean-tasting broth.
Step 8
While the soup is simmering, remove the kelp once it has infused its flavor. Removing it before it gets too soft prevents the broth from becoming cloudy or gummy.
Step 9
Stir the prepared seasoning paste into the pot. Continue to simmer gently over medium heat for about 20 minutes. This allows all the flavors to meld together beautifully.

Add the 400g of thoroughly washed bean sprouts to the pot and simmer for another 5 minutes. Be careful not to overcook the bean sprouts, as they will lose their crisp texture.

Finally, it’s time to season the soup. Adjust the taste with soy sauce or salt according to your preference. I finished seasoning with salt.

Squeeze out any excess water from the reserved shiitake mushrooms and julienne them finely. Finely chop the green onions. Adding these back to the soup will enhance its overall richness and aroma.

Add the julienned shiitake mushrooms and chopped green onions to the pot. Simmer for another 3 minutes, then turn off the heat. The fragrant flavors of the green onions and mushrooms will infuse into the broth.
