Ingredients

  • Well-fermented Napa Cabbage Kimchi, 1/2 head
  • Marinated Crabs (Ganjang Gejang), 2 crabs
  • Green Onion, roughly chopped, 3 Tbsp
  • Minced Garlic, 2 Tbsp
  • Marinated Crab Brine, 1 ladleful
  • Kimchi Juice, 1 ladleful
  • Seafood Broth (or Anchovy-Kelp Broth), 1L

Cooking Instructions

Step 1

First, prepare 1 liter of seafood broth (or anchovy-kelp broth) and bring it to a rolling boil. While the broth is heating, prepare the other ingredients.

Step 1

Step 2

Chop the prepared kimchi into bite-sized pieces, similar to the size you’d use for kimchi stew. Avoid cutting it too finely to maintain a pleasant texture.

Step 2

Step 3

Add the chopped kimchi to the pot and pour in 1 ladleful of kimchi juice. Add these directly to the boiling broth.

Step 3

Step 4

Now, prepare the marinated crabs, which are key to the dish’s rich flavor. Using marinated female crabs will provide an even more complex taste.

Step 4

Step 5

Add the 2 marinated crabs whole into the boiling broth. Next, add 1 ladleful of the marinated crab brine. This step is crucial for infusing the broth with the deep essence of the crab. The slightly pungent and rich crab brine, combined with kimchi, creates a truly unique flavor profile.

Step 5

Step 6

Stir in 2 Tbsp of minced garlic and 3 Tbsp of roughly chopped green onion, and continue to simmer. Once it comes to a rolling boil over high heat, reduce the heat to medium and let it simmer gently until the broth thickens and deepens in color. Taste the stew; if it needs more seasoning, add fish sauce or soy sauce to adjust. As it simmers, the broth will become slightly opaque, resembling the rich color of crab soup.

Step 6

Step 7

Your rich Gye-gukji is ready! The crab meat will be tender, and the broth will be spicy yet refreshingly savory, enhanced by the distinctive aroma and flavor of the marinated crabs – a truly fascinating taste sensation. Enjoy this wonderfully simple yet incredibly satisfying Gye-gukji made with homemade kimchi and marinated crabs!
