Main Ingredients- 1 fresh Greenling fish (Gomchi)
- 2 handfuls ripe Kimchi (approx. 200g)
- 1 bundle of Altar radish kimchi (or regular radish)
- 1/2 onion
- 1/2 green onion stalk (approx. 20cm)
Seasoning- 1 tsp Gochugaru (Korean chili flakes, adjust to taste)
- 2 tsp Guk-ganjang (Korean soup soy sauce)
- 1 tsp Coarse sea salt
- 1 tsp Minced garlic

Cooking Instructions
Step 1
First, prepare the broth that will add depth to your Gomchi-guk. In a pot, add enough water to generously cover, along with dried anchovies, kelp, and large chunks of radish. Simmer for 15-20 minutes until a clear and deep broth is formed. While the broth is simmering, prepare the other ingredients.
Step 2
Slice the 1/2 onion into thin strips. Cut the 1/2 green onion stalk (about 20cm) diagonally into bite-sized pieces. This will naturally add sweetness and aroma as it cooks.
Step 3
Chop the Altar radish kimchi into bite-sized pieces. If Altar radish kimchi is unavailable, you can use the brine from regular kimchi or thinly sliced fresh radish for a crisp texture. The type of kimchi used can affect the refreshing taste of the soup.
Step 4
Chop the ripe napa cabbage kimchi into manageable pieces (about 2-3cm). If your kimchi is well-fermented, it will lend a richer flavor to the soup.
Step 5
Clean and cut the 1 Greenling fish into serving-sized pieces (about 4-5cm). Trimming off the fins and any rough parts will result in a more tender fish.
Step 6
Bring the prepared broth to a boil. Add all ingredients except the Greenling fish (chopped napa kimchi, Altar radish kimchi, onion, and green onion) and cook together. The kimchi will soften and infuse the broth with savory and refreshing flavors.
Step 7
Add 2 tsp of Guk-ganjang (Korean soup soy sauce) to enhance the umami. Guk-ganjang helps maintain a clear soup color while adding a deep flavor.
Step 8
Add 1 tsp of minced garlic and let it simmer until its aroma permeates the soup. Garlic helps to eliminate any fishy odor and adds a spicy kick.
Step 9
Season with 1 tsp of coarse sea salt to taste. Finally, add 1 tsp of Gochugaru (Korean chili flakes) for a spicy flavor and appetizing color. Adjust saltiness to your preference.
Step 10
Now, add the prepared Greenling fish to the pot. Gently simmer for about 5 minutes, stirring carefully to prevent the fish from breaking apart. Be mindful not to overcook the fish, as it can become mushy and lose its flavor.
Step 11
Ladle the warm Gomchi-guk into bowls and serve. Enjoy a hearty and refreshing meal with a bowl of rice!
