Husband-Approved Delicious Crab Stew Recipe (Inspired by Baek Jong-won’s Recipe)
My husband was so impressed with his own cooking that he finished this crab stew in one sitting! Here’s a recipe for a wonderfully spicy and refreshing crab stew.
Main Ingredients- Anchovy-Kelp Broth: 1300-1400ml (about 7 paper cups)
- Fresh Shrimp: 15 pieces
- Fresh Blue Crabs: 2
- Radish: Moderately sized, cut into pieces
- Onion: 1/2
- Zucchini: 1/4
- Green Onion: 1/2 stalk
- Cheongyang Pepper (Spicy Korean chili pepper): 2
- Crown Daisy (Shungguk): 1 handful
- Mushrooms: 1 handful (e.g., shiitake, oyster mushrooms)
Seasoning- Doenjang (Fermented Soybean Paste): 1 Tbsp
- Gochujang (Korean Chili Paste): 1/2 Tbsp
- Minced Garlic: 1.5 Tbsp
- Mirin (Rice Wine): 2 Tbsp
- Soup Soy Sauce: 1 Tbsp
- Gochugaru (Korean Chili Flakes): 2 Tbsp
- Doenjang (Fermented Soybean Paste): 1 Tbsp
- Gochujang (Korean Chili Paste): 1/2 Tbsp
- Minced Garlic: 1.5 Tbsp
- Mirin (Rice Wine): 2 Tbsp
- Soup Soy Sauce: 1 Tbsp
- Gochugaru (Korean Chili Flakes): 2 Tbsp
Cooking Instructions
Step 1
The freshness of the crab is key! First, open the crab’s hard shell and remove the innards and gills. Use an unused toothbrush to scrub any dirt from the crevices and legs. This will make your broth much clearer.
Step 2
To ensure the flavors meld well, cut the vegetables into substantial pieces. Slice the radish about 0.7cm thick (either in thin wedges or cubes). Slice the onion and zucchini into similar-sized pieces. Cut the green onion diagonally and mince the Cheongyang peppers.
Step 3
For a deep and refreshing broth, prepare your anchovies and kelp. In a pot, add 1300-1400ml of water (about 7 paper cups) along with the anchovies and kelp. Boil for 10 minutes to create a delicious broth. Remove the anchovies and kelp, then add all the sliced radish. Boiling the radish for a while will give the broth a refreshing taste.
Step 4
Now for the key to flavor! It’s time to dissolve the spicy seasonings. Once the broth starts boiling, add 1 Tbsp of doenjang, 1/2 Tbsp of gochujang, 2 Tbsp of gochugaru, and 1.5 Tbsp of minced garlic, stirring well to combine. Next, add the sliced onions and zucchini and boil them together, allowing their sweetness to infuse into the broth.
Step 5
Time to add the fresh seafood! Carefully place the prepared shrimp and cleaned crabs into the pot. To remove any fishy odors and enhance the flavor, immediately pour in 2 Tbsp of mirin. Cover the pot and simmer over medium heat for about 5-7 minutes, or until the crabs and shrimp turn bright red and are cooked through.
Step 6
When the seafood is almost cooked, add the aromatic crown daisy, green onions, spicy Cheongyang peppers, and mushrooms for a chewy texture. Simmer for a little longer until all ingredients are well combined. Your delicious crab stew is almost ready!
Step 7
Finally, taste the broth and adjust the seasoning if needed, using soup soy sauce. You can also add a pinch of salt or pepper to your preference. Enjoy your hot and delicious crab stew with a bowl of rice!
