As winter arrives, the craving for a spicy and warming cod soup begins! We’ve prepared a hearty, homemade fresh cod soup that rivals your favorite restaurant’s version, packed with authentic flavor. This recipe delivers a beautifully balanced spicy yet refreshing broth with tender, flaky cod.
Main Ingredients- 1 fresh cod (about 1kg), cleaned
- 1 handful of bean sprouts (approx. 100g)
- 1/4 daikon radish (approx. 200g)
- 1/2 stalk of Korean green onion (or regular green onion)
- 1/2 block of firm tofu
- 2 pieces of dried kelp (kombu, approx. 10cm x 10cm)
Cooking Instructions
Step 1
Gently rinse the fresh cod under cold running water to remove any blood. Carefully clean any remaining impurities from the fins and cavity for a clearer broth. Set aside after washing.
Step 2
Trim the roots and tips of the bean sprouts for a crisp texture. Slice the daikon radish thinly or into bite-sized pieces. Cut the Korean green onion (or regular green onion) into large diagonal pieces. Slice the tofu into 1.5cm thick rectangles.
Step 3
In a pot, combine the water (or anchovy-kelp broth) and the two pieces of dried kelp. Once the water reaches a boil, remove the kelp. Add the sliced daikon radish and simmer for about 5 minutes until the radish becomes slightly translucent and its sweetness infuses the broth.
Step 4
Once the radish is partially cooked, add the prepared fresh cod. Cook until the cod turns opaque and starts to flake. Then, add the bean sprouts. Cook until the bean sprouts are tender but still retain some crunch. (Tip: To prevent a raw smell from the bean sprouts, cover the pot immediately after adding them and only lift the lid once they are cooked.)
Step 5
When the cod and bean sprouts are cooked through, gently add the tofu and simmer for another 1-2 minutes. Stir in the red chili flakes and minced garlic, ensuring they are well distributed. Finally, add the green onions, salted fermented shrimp, and soup soy sauce. Bring to a gentle boil. Season with the salted fermented shrimp first, and then adjust with coarse sea salt to achieve your desired depth of flavor for this delicious and revitalizing cod soup.
