Enjoy a hearty portion of winter delicacy, cod roe stew, right at home! Nowadays, frozen cod roe is readily available, making it easy to cook delicious and satisfying cod roe stew at home using cod or pollack roe. Experience the joy of adding as much roe as you desire, making it as good as dining out. The clear and refreshing bean sprout broth effectively removes any fishiness from the roe while adding a deep umami flavor. It’s a real appetite-whettter!
Main Ingredients- Cod Roe Stew Mix (Cod roe, pollack roe, etc.) 3 types, 400g
- Radish 1 slice, 5cm thick
- Bean Sprouts 1 handful
- Crown Daisy 3-4 stalks (optional)
- Red Chili Pepper 1/2
- Green Chili Pepper 1/2
- Green Onion 1/4 stalk
Cooking Instructions
Step 1
First, soak the cod roe for the stew in lightly salted cold water for about 5-10 minutes. This helps remove impurities and blood, reducing any fishy odor. Gently rinse the roe, then drain it in a colander.
Step 2
Prepare the other ingredients for the stew. Thinly slice the red and green chili peppers diagonally. Slice the green onion diagonally or cut it in half lengthwise and chop it into large pieces. Wash the crown daisy and set aside. If desired, cut tofu into cubes.
Step 3
Pour 5-6 cups (about 1-1.2L) of water into a pot. Add the roughly chopped radish and the washed bean sprouts to start making the broth. Bring to a boil over high heat.
Step 4
Once the broth is boiling vigorously, the bean sprouts will be tender, and the radish will have released its refreshing flavor. Now, add 1/2 Tbsp of salted shrimp to season the base. Salted shrimp adds umami and helps season the broth.
Step 5
Next, add 1/2 Tbsp of gochugaru (Korean chili flakes) to give the broth its color. If you prefer it spicier, you can add a bit more.
Step 6
To add a savory and subtly sweet flavor, incorporate 1/4 Tbsp of miso paste. Miso paste adds sweetness, making the broth richer without needing extra sugar. You can use homemade soybean paste, but use a slightly smaller amount.
Step 7
When the broth comes to a boil again, carefully add the prepared cod roe. Cod roe can become tough if overcooked, so reduce the heat to medium after adding it.
Step 8
Once the roe is partially cooked, taste the broth and adjust the seasoning with salt as needed. Balance the flavor with salted shrimp and salt to your preference.
Step 9
Add 1 Tbsp of fish sauce (anchovy flavor) for an extra layer of deep umami. If you don’t have fish sauce, you can use a little Korean soup soy sauce.
Step 10
Add 1/2 Tbsp of minced garlic to enhance the aroma of the cod roe stew. Adding minced garlic towards the end preserves its pungent fragrance.
Step 11
Finally, add all the pre-sliced chili peppers, green onions, crown daisy (or tofu, etc.). Let it simmer for a bit longer to allow all the ingredients to meld together. Be careful not to let it boil over. Turn off the heat once the crown daisy wilts slightly. Overcooking can make the vegetables mushy.
Step 12
Serve the deliciously prepared cod roe stew in bowls. Enjoy the exquisite combination of hot, refreshing broth and tender roe!
