How to Make a Hearty Beef and Radish Soup with Seasonal Fall Radishes
Fall radishes are wonderfully sweet and delicious! Let’s make a flavorful, spicy, and refreshing beef and radish soup using these seasonal gems. This soup is perfect for a hearty meal.
Main Ingredients- 1/2 small Korean radish (Mu)
- 2 handfuls of soybean sprouts (about 200g)
- 1 stalk of green onion
- 150g beef (for soup)
Seasoning Ingredients- 1 Tbsp sesame oil
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp fish sauce (or tuna extract)
- 1 Tbsp soup soy sauce
- 1/2 Tbsp minced garlic
- 1 tsp salt (or adjust to taste)
- 1 tsp black pepper
- 1/2 Tbsp Dasida (or MSG/seasoning powder)
- 1300ml water (approx. 6.5 cups)
- 1 Tbsp sesame oil
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp fish sauce (or tuna extract)
- 1 Tbsp soup soy sauce
- 1/2 Tbsp minced garlic
- 1 tsp salt (or adjust to taste)
- 1 tsp black pepper
- 1/2 Tbsp Dasida (or MSG/seasoning powder)
- 1300ml water (approx. 6.5 cups)
Cooking Instructions
Step 1
Chop the green onion into large pieces. For the thicker white parts, slice them in half lengthwise to allow the flavors to meld better.
Step 2
Wash and peel the 1/2 small Korean radish. Cut it into bite-sized cubes or slices about 0.5cm thick. You can adjust the size according to your preference.
Step 3
Rinse the 2 handfuls of soybean sprouts thoroughly under cold running water and drain them. The crisp texture of the sprouts will enhance the soup’s flavor.
Step 4
In a deep pot, add the 150g of beef and 1 Tbsp of sesame oil.
Step 5
Add 2 Tbsp of gochugaru and stir-fry the beef and chili flakes over medium-low heat until fragrant. This step helps remove any gamey smell from the beef and brings out the rich flavor of the chili flakes.
Step 6
Once the beef and chili flakes are well stir-fried, add the sliced radish and cook for about 1 minute, mixing everything together. The radish will begin to soften and release its sweetness into the broth.
Step 7
After the ingredients are well combined, pour in 1300ml of water and bring to a boil over high heat.

Once the soup comes to a boil, add 1 Tbsp of soup soy sauce and 2 Tbsp of fish sauce for seasoning. The fish sauce will add a deep, savory umami to the broth.

Add 1 tsp of black pepper and continue to simmer. Black pepper helps to further reduce any residual meat odor and adds a subtle warmth.
Step 10
As the soup boils, skim off any foam or scum that rises to the surface. Removing the foam will result in a clearer and cleaner-tasting broth.

Now, add 1 tsp of salt and 1/2 Tbsp of Dasida (or seasoning powder) to finalize the taste. Adjust the seasoning with more salt or fish sauce as needed.
Step 12
Finally, add the cleaned soybean sprouts and the chopped green onions. Let the soup simmer for another few minutes until the sprouts are just tender. Be careful not to overcook the sprouts, as they can become mushy.
