Ingredients for Sundae Udon Hot Pot
- Assorted Sundae 600g (cut into bite-sized pieces)
- Baby Napa Cabbage 6 leaves (cut into bite-sized pieces)
- Onion 1/2 (sliced)
- Green Onion 1 (cut into large pieces)
- Cheongyang Pepper 1 (finely chopped, adjust for spiciness)
- Perilla Leaves 1 bunch (washed, leaves separated)
- Udon Noodles 1 serving
- Rice Cakes 1/2 handful
- Flat Glass Noodles (Fen Ma Lu) 3 strands (optional, for added chewiness)
- Beef Bone Broth (Sagol Yuksu) 700-800ml
Seasoning for Stew/Hot Pot
- Gochugaru (Korean chili flakes) 1.5 Tbsp
- Minced Garlic 1 Tbsp
- Soy Sauce for Soup (Gukganjang) 1 Tbsp
- Fish Sauce (Anchovy or Tuna) 1.5 Tbsp
- Salted Shrimp (Saeujeot) 1/2 Tbsp
- Perilla Seed Powder (Deulkkaegaru) as needed
- Black Pepper a pinch
- Gochugaru (Korean chili flakes) 1.5 Tbsp
- Minced Garlic 1 Tbsp
- Soy Sauce for Soup (Gukganjang) 1 Tbsp
- Fish Sauce (Anchovy or Tuna) 1.5 Tbsp
- Salted Shrimp (Saeujeot) 1/2 Tbsp
- Perilla Seed Powder (Deulkkaegaru) as needed
- Black Pepper a pinch
Cooking Instructions
Step 1
Prepare the sundae by cutting it into manageable, bite-sized pieces. Wash the baby napa cabbage and cut it into pieces similar in size. Slice the onion, and chop the green onion and Cheongyang pepper. Wash the perilla leaves and separate the leaves. Arrange all these prepared ingredients attractively in your hot pot.
Step 2
Add the udon noodles, rice cakes, and flat glass noodles to the hot pot, nestled amongst the other ingredients. Pour in the beef bone broth, ensuring it covers most of the ingredients. Now it’s ready to be cooked!

Bring the hot pot to a boil over high heat, adding the gochugaru, minced garlic, soy sauce for soup, and fish sauce. Once it starts boiling vigorously, reduce the heat to medium-low and let it simmer for about 5 minutes. This allows the flavors to meld beautifully.

After simmering, stir in a generous amount of perilla seed powder for a nutty richness. Season with salted shrimp to taste, adjusting the saltiness and flavor. Finish with a pinch of black pepper to enhance the aroma and remove any gamey notes. Taste and add more fish sauce or salt if needed.
