Key Ingredients for Sundubu Jjigae- 1 Tbsp cooking oil
- 1 stalk green onion, thinly sliced
- 200g stew-grade pork, cut into bite-sized pieces
- 1.5 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp oyster sauce
- 1 Tbsp cooking wine (e.g., mirin)
- 1 Tbsp minced garlic
- 1 cup water (200ml)
- 1 packet soft tofu (400g)
- 1 egg
Cooking Instructions
Step 1
Begin by heating 1 tablespoon of cooking oil in a pot over medium-low heat. Add the thinly sliced green onion and stir-fry until fragrant. Gently sautéing the green onions will release their natural sweetness. (about 1-2 minutes)
Step 2
Once the green onions are aromatic, add the bite-sized pork pieces to the pot. Increase the heat to high and stir-fry until the pork is lightly browned and crispy. This step enhances the savory flavor.
Step 3
When the pork is mostly cooked, add 1.5 tablespoons of red pepper flakes (gochugaru). Stir-fry quickly to prevent burning, then add 1 tablespoon of oyster sauce. Continue to stir-fry with the pork to develop a deep umami flavor. (about 30 seconds)
Step 4
Next, add 1 tablespoon of cooking wine and 1 tablespoon of minced garlic. Stir-fry for another moment to remove any pork odor. Pour in 1 cup (200ml) of water, bring to a boil over high heat.
Step 5
Once the broth is boiling vigorously, carefully add the packet of soft tofu (400g). You can gently break the tofu into large chunks with a spoon as you add it for a softer texture. Let it simmer for a bit longer, then crack 1 egg directly into the stew. You can leave the egg yolk intact or lightly stir it in.
Step 6
Serve the piping hot and delicious Sundubu Jjigae with a bowl of steamed rice. Enjoy the rich, spicy broth and tender ingredients!
