Cooking Instructions

Step 1

First, prepare the kimchi, which is the star of this stew. Cut the fermented napa cabbage kimchi into bite-sized pieces, about 2-3 cm squares. Thinly slice the onion, and diagonally slice the green onion.

Step 2

Heat a pot over medium-low heat. Add the cut kimchi and stir-fry. To prevent sticking and ensure the kimchi becomes tender, add 1 tablespoon of water to ‘water-fry’ it. Stir-fry for about 2-3 minutes until the kimchi becomes slightly translucent.

Once the kimchi is sufficiently stir-fried, add the entire can of canned saury, including the liquid, into the pot. Rinse the empty saury can with water and fill it with 450ml of water, then pour this into the pot. This helps to enrich the broth with the flavor of the saury and its juices.

Now, let the saury and kimchi simmer together. Add the sliced onion to the pot. Stir in 1 tablespoon of sugar to balance the acidity and 1 tablespoon of minced garlic for extra flavor.
