Pork ribs are delicious even when simply grilled! This recipe uses leftover grilled pork ribs to create a flavorful and satisfying kimchi stew that’s perfect as a side dish for breakfast or any meal. We’ve adapted and enhanced Baek Jong-won’s recipe for a less greasy, incredibly delicious stew that pairs perfectly with rice, making extra side dishes unnecessary. Ingredients

  • 5 pork ribs
  • Suitable amount of aged kimchi
  • 2 Tbsp soju (Korean rice wine)
  • Plenty of rice water
  • A little onion
  • A little green onion
  • 1 Tbsp doenjang (fermented soybean paste)
  • A pinch of whole peppercorns
  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 1.5 Tbsp guk-ganjang (Korean soup soy sauce)
  • 0.5 Tbsp minced garlic
  • 0.5 Tbsp sugar
  • 0.5 Tbsp saeujeot (fermented shrimp paste)

Cooking Instructions

First, soak the pork ribs in water for about 40 minutes to remove any blood. I also added 2 tablespoons of soju to the soaking water. If you’re concerned about gamey odors and have more time, soaking for about 1.5 hours would be even better for a cleaner taste.

Next, in a pot, add enough water to cover the ribs, along with 1 tablespoon of doenjang and whole peppercorns. Once the water boils, add the soaked pork ribs and blanch them for about 15 minutes to remove any impurities. After blanching, remove the ribs and rinse them thoroughly under cold running water. Drain them well in a colander and set aside.

Now, prepare the pot for the pork ribs kimchi stew. Lay kimchi leaves on the bottom of the pot, one by one. I didn’t use a lot of kimchi as I didn’t have much at home, but layer it generously. Then, arrange the blanched pork ribs on top of the kimchi.

Add 0.5 tablespoon of minced garlic and 0.5 tablespoon of saeujeot to the pot with the kimchi and ribs. Pour in enough rice water to cover the ingredients. (It’s good to have extra rice water on hand in case you need to add more while cooking.) The rice water should be just enough to make it soupy, not overly submerged. I added a generous amount initially, as I planned to let it reduce and thicken. Sprinkle in 1.5 tablespoons of gochugaru.

Next, add 0.5 tablespoon of sugar for a touch of sweetness and 1.5 tablespoons of guk-ganjang for seasoning. Slice the onion thinly and thinly slice the green onion. Add these vegetables to the pot. (I didn’t add a large amount of onion and green onion, but you can add an appropriate amount to your liking.) Turn on the heat and let it simmer and reduce.

Cover the pot and let the Baek Jong-won style pork ribs kimchi stew simmer until delicious. To prevent burning as the liquid reduces, start on high heat. Once it begins to boil vigorously, reduce the heat to medium and allow it to simmer and thicken.

I tried adapting Baek Jong-won’s recipe, and it turned out incredibly delicious! There’s no gamey smell, and it’s not too spicy, so I think even children will enjoy it.
