- 46g Fermented Cabbage Kimchi (cut into bite-sized pieces)
- 1 pack Anchovy, Kelp, or Stock Pack for broth
Other Ingredients- 43g Tofu (cubed)
- 15g Green Onion (sliced diagonally)
Seasonings- 1 tsp Soy Sauce (regular or dark)
- Pinch of Red Pepper Flakes (to taste)
- 43g Tofu (cubed)
- 15g Green Onion (sliced diagonally)
Seasonings- 1 tsp Soy Sauce (regular or dark)
- Pinch of Red Pepper Flakes (to taste)
Cooking Instructions
Step 1
In a pot, add 4-5 cups of water, anchovies, and kelp (or a stock pack). Bring to a boil over high heat for about 5-10 minutes to create a rich broth. If you prefer, you can use a store-bought stock.
Step 2
Once the broth has infused, remove the anchovies and kelp using a sieve, leaving only the clear broth. Add 1 tsp of soy sauce to enhance the savory flavor.
Step 3
Add the sliced green onions and simmer for a moment to allow their fragrance to infuse into the broth.
Step 4
Add the chopped kimchi and let it simmer, allowing its refreshing and spicy flavor to meld with the broth. If your kimchi is very sour, a tiny pinch of sugar can help balance it.
Step 5
Add a pinch of red pepper flakes according to your preference for extra spice. Feel free to add more if you enjoy a spicier kick.
Step 6
Once the soup is bubbling, carefully add the cubed tofu. Stir gently to prevent the tofu from breaking apart.
Step 7
Finally, add the cut fish cakes. Simmer for just 2-3 minutes until the fish cakes are tender and slightly softened. Avoid overcooking, as this can make the fish cakes tough.
Step 8
Your delicious and invigorating Kimchi Fish Cake Soup is ready! Serve hot for a comforting and revitalizing meal that will warm you from the inside out.
