I made dakbokkeumtang, a dish my husband absolutely loves. With fluffy potatoes and savory broth, you won’t need any other side dishes when you mix rice into it~ ^^

Main Ingredients

  • 800g chicken, cut for dakbokkeumtang
  • 1 onion
  • 1/2 carrot
  • 2 potatoes
  • 3 Korean chili peppers (cheongyang)
  • 1 green onion

Seasoning Ingredients

  • 4 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp gochugaru (Korean chili powder)
  • 2.5 Tbsp jin-ganjang (Korean soy sauce)
  • 1.5 tsp black pepper powder
  • 2 cups soju (approx. 200ml)
  • 2 Tbsp minced garlic
  • 3 Tbsp sugar
  • 700ml water

Cooking Instructions

First, prepare one pack (800g) of chicken cut specifically for dakbokkeumtang. Using fresh chicken is the foundation for a delicious dish.

Rinse the chicken thoroughly under cold running water several times. It’s important to wash it meticulously to remove any impurities.

While rinsing, use scissors or a knife to trim off any fatty parts from the inside of the skin. This step helps to create a cleaner broth for your dakbokkeumtang.

Place the trimmed chicken in a pot. To remove any gamey smell, add 2 cups of soju, 1 Tbsp of minced garlic, and a pinch of black pepper (not the full amount from the ingredients list). Add enough water to cover the chicken and bring it to a boil. Simmer for about 5-7 minutes, then drain the water and discard it, keeping only the chicken. This pre-boiling step is a secret to effectively eliminating any unpleasant odors from the chicken.

Now, let’s prepare the vegetables. Peel the carrot, cut it in half, and then into quarter pieces. Cut the onion in half and then into three large wedges. Peel the potatoes or scrub them clean, then cut them into 3-4 bite-sized pieces. Cutting the vegetables to a similar size as the chicken pieces will help them cook evenly.

Cut the green onion into approximately 7cm lengths. Remove the stems from the Korean chili peppers and slice them diagonally. If you prefer a spicier dish, you can adjust the amount of chili peppers or leave the seeds in.

Time to make the flavorful sauce, the heart of dakbokkeumtang! In a bowl, combine 4 Tbsp gochujang, 3 Tbsp gochugaru, 2.5 Tbsp jin-ganjang, the remaining 1.5 tsp black pepper, 2 Tbsp minced garlic, and 3 Tbsp sugar. Mix everything well to create the seasoning paste. Feel free to adjust the sugar or soy sauce according to your taste.

Rinse the chicken again under cold water after the initial pre-boiling. This second rinse further removes any remaining impurities or excess fat, ensuring a clean and pure flavor.

Now, arrange the cleaned chicken neatly in the pot. It’s best to use a large pot for dakbokkeumtang so that the ingredients cook properly and the seasoning penetrates evenly.

Place the prepared potatoes, onion, carrot, and diagonally sliced Korean chili peppers on top of the chicken. When vegetables are placed on top of the chicken, they absorb the delicious broth as they cook, adding depth to the flavor.

Pour the prepared seasoning paste evenly over the chicken and vegetables. Next, add 700ml of water. The amount of water determines the final consistency of your dakbokkeumtang, so you can adjust it based on how much you plan to reduce the sauce.

Now, let’s cook! Begin by boiling vigorously over high heat for about 10 minutes. Once the broth starts boiling, reduce the heat to medium and continue to simmer for another 15 to 20 minutes, covered. Cooking over medium heat allows the chicken to become tender, the vegetables to cook perfectly, and the broth to reduce to a rich, flavorful consistency.

During the simmering process, stir the contents of the pot with a ladle, making sure to scrape the bottom. This ensures that the seasoning is evenly distributed throughout the chicken and vegetables, resulting in a more delicious dakbokkeumtang. Be careful not to scorch the bottom while stirring.
