Main Ingredients
  • Spam or Luncheon Meat 77g, cut into bite-sized pieces
  • Vienna Sausages or your favorite sausages 40g, sliced for easy eating
  • Well-fermented Napa Cabbage Kimchi 75g, finely chopped

Additional Ingredients
  • Onion 49g, thinly sliced
  • Green Onion 21g, diagonally sliced
  • Ramen Noodles 48g, dried or fresh

Spicy Seasoning Mix
  • Minced Garlic 8g (approx. 1.5 tsp)
  • Minced Cheongyang Pepper 9g (adjust to your spice preference)
  • Gochujang (Korean chili paste) 1.5 Tbsp
  • Oligodang (corn syrup) 0.5 Tbsp (sweetness adjustable, can substitute with sugar)
  • Soy Sauce 1 tsp
  • Black Pepper, a pinch

Broth (Choose one)
  • Plain Water 1 serving (approx. 300-400ml)
  • Beef Bone Broth 1 serving (store-bought or homemade)
  • Rice Water 1 serving (water used for rinsing rice)

Cooking Instructions

Step 1

First, let’s prepare the seasoning mix, the heart of a delicious Budae-jjigae. In a bowl, combine minced garlic, minced Cheongyang pepper, gochujang, oligodang (or sugar), soy sauce, and black pepper. Mix well until everything is evenly combined.

Step 2

Prepare the vegetables. Thinly slice the onion and diagonally slice the green onion. Slicing them this way will help to infuse more flavor into the broth as it cooks.

Step 3

Finely chop the kimchi. While you can use a knife, using kitchen scissors makes this process much faster and easier!

Step 4

Slice the ham and sausages into bite-sized pieces for easy eating. Slicing the ham into cubes and the sausages diagonally can make the dish look even more appetizing.

Step 5

Now, arrange the prepared ham, sausages, kimchi, onion, and green onion nicely in a pot. Do not turn on the heat yet! Arranging the ingredients attractively will make the stew look even more appealing when it’s cooked.

Step 6

It’s time to add the broth. Pour enough plain water to cover the meats (about 300-400ml) and bring it to a boil over high heat. If you prefer a deeper, richer flavor, using rice water or store-bought beef bone broth instead of plain water will make it much more delicious.

Step 7

Once the water is boiling vigorously, stir in the prepared seasoning mix. Make sure to dissolve any clumps and mix it thoroughly with the broth so the flavors are well distributed.

Step 8

After adding the seasoning, continue to simmer the stew over medium heat for about 5 minutes. This allows the flavors from the ham and sausages to fully infuse into the broth. The oils released from the meats will add a wonderful savory depth to the soup.

Step 9

Once the broth has developed a rich flavor, it’s time to add the ramen noodles! If you prefer, you can substitute the ramen with chewy rice cakes (tteok) or glass noodles (dangmyeon) for a different texture.

Step 10

When the ramen noodles are cooked to your liking and the broth has thickened slightly, your delicious Budae-jjigae is ready! It’s best enjoyed piping hot. Serve with a bowl of rice for a truly satisfying meal!
