Main Ingredients- Assorted Canned Meats (sausages, Spam, bacon, etc.) 350g
- Pork (belly or shoulder) 100g
- Rice cake for soup (tteokguk tteok) 1 handful (approx. 100g)
- Kimchi (well-fermented, sour kimchi) a moderate amount
- Cabbage 1/4 head
- Onion 1/2
- Green onion 1 stalk
- Cheongyang chili peppers 2
- Carrot 1/4
Seasoning and Broth- Soy sauce for soup (guk-ganjang) 5 Tbsp (or fish sauce)
- Gochugaru (Korean chili flakes) 1 Tbsp (adjust for spice level)
- Sugar 1/2 Tbsp
- Minced garlic 1/2 Tbsp
- Katsuobushi broth or beef bone broth, kelp broth, a suitable amount (approx. 600-800ml)
- Soy sauce for soup (guk-ganjang) 5 Tbsp (or fish sauce)
- Gochugaru (Korean chili flakes) 1 Tbsp (adjust for spice level)
- Sugar 1/2 Tbsp
- Minced garlic 1/2 Tbsp
- Katsuobushi broth or beef bone broth, kelp broth, a suitable amount (approx. 600-800ml)
Cooking Instructions
Step 1
First, prepare all the ingredients for the Budae Jjigae. Slice the assorted meats into bite-sized pieces (about 1-1.5cm thick) and do the same for the pork. Coarsely shred the cabbage, and chop the onion and carrot into generous pieces. Slice the green onion diagonally and finely chop the Cheongyang chili peppers. Briefly soak the rice cakes for soup in cold water.
Step 2
Heat a deep pot or wok over medium-high heat and add a little cooking oil. Add the sliced pork and stir-fry until the surface is browned. Once the pork is partially cooked, add the kimchi and stir-fry together. When the kimchi is softened, add the gochugaru, sugar, minced garlic, and guk-ganjang. Continue to stir-fry for about 1 minute until the seasonings are well incorporated. This step develops a deep flavor from the ingredients.
Step 3
Arrange the prepared meats, cabbage, onion, and carrot nicely over the stir-fried pork and kimchi. Pour in enough of your chosen broth (katsuobushi, beef bone, or kelp broth) to cover the ingredients. Bring to a boil over high heat, then reduce the heat to medium and simmer for 5-7 minutes to allow the flavors to meld.
Step 4
Once the stew has reduced slightly, add the green onion and Cheongyang chili peppers and simmer for another moment. Taste the stew and adjust the seasoning with guk-ganjang or salt if needed, according to your preference. For an even more satisfying meal or a great side for drinks, you can add pre-soaked glass noodles or instant ramen noodles.
