As spring arrives, we crave fresh kimchi! This scallion kimchi is perfect for the season. My family requested it to go with meat, so I quickly made it. Scallions are at their best in spring, making this kimchi exceptionally delicious during this time. Enjoy the crisp texture and vibrant flavor!

Ingredients

  • 1.8kg Scallions (approx. 2 bunches)

Seasoning

  • 300-350ml Red Crab Soy Sauce (or anchovy sauce, or add salted shrimp)
  • 100ml Plum Extract
  • 250ml Cooked Sweet Rice Flour Paste (Jirun)
  • 200g Red Pepper Powder
  • Sesame Seeds to taste

Cooking Instructions

Prepare 2 bunches of fresh scallions. Young, tender scallions harvested in spring are ideal for making kimchi.

Trim off the root ends of the scallions. If the outer layers are dirty or tough, gently peel them away for a cleaner taste and texture.

Once you have about 1.8kg of trimmed scallions (from 2 bunches), wash them thoroughly under running water. After washing, drain them well in a colander to remove excess water. This prevents the kimchi from becoming watery and helps the seasoning adhere properly.

Place the drained scallions in a large bowl. Pour 200ml of the red crab soy sauce specifically over the white bulbous parts of the scallions. Let them marinate for about 30 minutes. Flip the scallions once or twice during this time to ensure even salting.

After the scallions have softened slightly, add 100ml of plum extract and 250ml of sweet rice flour paste. Gently mix everything together. Adjust the seasoning by adding an additional 100ml of red crab soy sauce or anchovy sauce if needed. Using salted shrimp (saeujeot) at this stage can also add a deeper umami flavor.

Now, add 200g of red pepper powder and mix well until the scallions are evenly coated with the vibrant red color. Finally, sprinkle in some sesame seeds for a nutty aroma. Your delicious scallion kimchi seasoning is now complete.

Transfer the prepared scallion kimchi into an airtight container. Let it ferment at room temperature for about half a day. This allows the characteristic mild spiciness of the scallions to meld with the savory seasoning, creating a wonderfully flavorful kimchi.
