A hearty bowl of soup makes a satisfying meal, even without many side dishes. This is a spicy Yukgaejang made using ingredients readily available in your fridge! Enjoy a delicious and comforting meal with this easy-to-make spicy beef soup.
Main Ingredients
- 300g Korean beef brisket (Yangji)
- 1 bunch green onions (mostly the white parts, generously)
- 1 pack enoki mushrooms
- 1 handful dried shiitake mushrooms (soaked in warm water)
Seasoning
- 2 Tbsp fish sauce or Korean soup soy sauce
- 1 Tbsp fine gochugaru (Korean chili powder)
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
Start by placing the Korean beef brisket (Yangji) in a pot with cold water. Bring it to a rolling boil over high heat. Skim off any scum or impurities that rise to the surface during boiling to ensure a clear broth.
Step 2
While the beef is boiling, prepare the seasoning mix. In a small bowl, combine the fish sauce (or soup soy sauce), fine gochugaru, and minced garlic. Having the seasoning ready beforehand makes adding it later much smoother.
Step 3
Once the beef is cooked, remove it from the pot and let it cool slightly. Before it cools completely, shred the beef by hand along the grain into bite-sized pieces. Shredding them coarsely will enhance the chewy texture.

To the beef broth, add the soaked dried shiitake mushrooms (trim off stems and slice), enoki mushrooms, and the roughly chopped green onions. Bring this back to a boil. Adding plenty of vegetables will contribute to a richer and deeper flavor in the soup.

Add the pre-mixed seasoning and the shredded beef to the pot. Continue to simmer over medium heat for about 5 minutes, allowing the flavors to meld together.
