Spicy Tofu Kimchi Rice Cake Soup
When a regular rice cake soup feels bland and boring, try making this special Tofu Kimchi Rice Cake Soup for a delicious twist! It’s wonderfully satisfying as a meal and also excellent for a hangover. You’ll be hooked by its irresistible flavor that goes down so smoothly!
Main Ingredients- 55g minced pork
- 1/4 onion (thinly sliced)
- 1 bowl of kimchi (fermented kimchi, finely chopped)
- Rice cake for soup, adequate amount (approx. 1-2 servings)
- 1/2 stalk of green onion (bias cut)
- 2 Korean green chili peppers (bias cut)
- 800ml water
- 1 block of tofu (cut into large pieces)
Seasoning Ingredients- 1 Tbsp soy sauce for soup
- 1 Tbsp minced garlic
- 1 Tbsp chicken stock (optional, for extra umami!)
- 1 tsp sugar (to balance the kimchi’s sourness)
- 2 Tbsp red pepper flakes (adjust for spiciness)
- 1/2 cup kimchi juice (standard paper cup size, adds depth to the broth)
- 2 Tbsp sesame oil
- 1 Tbsp soy sauce for soup
- 1 Tbsp minced garlic
- 1 Tbsp chicken stock (optional, for extra umami!)
- 1 tsp sugar (to balance the kimchi’s sourness)
- 2 Tbsp red pepper flakes (adjust for spiciness)
- 1/2 cup kimchi juice (standard paper cup size, adds depth to the broth)
- 2 Tbsp sesame oil
Cooking Instructions
Step 1
Soak the rice cakes for soup in cold water for about 10 minutes. This prevents them from sticking together and ensures a chewier texture when cooked.
Step 2
Thinly slice the onion. Bias cut the green onions and Korean green chili peppers into bite-sized pieces. Finely chop the kimchi with scissors. Mince the garlic if not already done.
Step 3
Heat 2 tablespoons of sesame oil in a deep pot or wok. Add the chopped kimchi and stir-fry until fragrant and softened, about until the color changes. Then, add the minced pork and continue to stir-fry for another 3 minutes. It’s important to break up the pork as it cooks to prevent clumping.
Step 4
Cut the tofu into large pieces, or use a spoon to roughly mash it. Adding mashed tofu allows it to break down into the broth, enriching its flavor and texture.
Step 5
Pour 800ml of water into the pot with the stir-fried kimchi and pork. Bring to a boil over high heat. Once boiling vigorously, add the mashed tofu, sliced onion, and all the prepared seasoning ingredients (soy sauce for soup, minced garlic, chicken stock, sugar, red pepper flakes, and kimchi juice). Boil for 10 minutes over high heat to allow the flavors to meld.
Step 6
Once the broth has developed flavor, add the soaked rice cakes and cook until they are tender and chewy. When the rice cakes are cooked, add the bias-cut green onions and Korean green chili peppers, and simmer for another moment. Your delicious and spicy Tofu Kimchi Rice Cake Soup is ready!
