Seasoning Ingredients- 1/3 cup soy sauce (approx. 70ml)
- 1 cup gochugaru (Korean chili flakes, approx. 100g)
- 2/3 cup minced garlic (approx. 100g)
- 1/3 cup salt (approx. 70g)
- 1/3 cup sugar (approx. 70g)
- 1/2 cup cooking oil (approx. 120ml)
- 1/3 cup sesame oil (approx. 70ml)
- 1/3 cup soy sauce (approx. 70ml)
- 1 cup gochugaru (Korean chili flakes, approx. 100g)
- 2/3 cup minced garlic (approx. 100g)
- 1/3 cup salt (approx. 70g)
- 1/3 cup sugar (approx. 70g)
- 1/2 cup cooking oil (approx. 120ml)
- 1/3 cup sesame oil (approx. 70ml)
Cooking Instructions
Step 1
In a wide pan, heat 1/2 cup of cooking oil and 1/3 cup of sesame oil over medium-low heat. Once warm, add 1 large leek, finely chopped. Sauté the leek for about 2-3 minutes until it becomes translucent and fragrant, being careful not to burn it. This step creates a flavorful leek oil that adds depth to the seasoning.
Step 2
Once the leek is translucent and aromatic, add 200g of minced pork. Break apart any clumps of meat and stir-fry.
Step 3
Continue to cook the pork for about 3-4 minutes, until the exterior turns white and it’s cooked through. Stir well to ensure the pork fat mixes evenly.
Step 4
When the pork is cooked, add 1 finely diced medium onion to the pan. Sauté for another 2-3 minutes until the onion becomes translucent and soft. The sweetness from the onion will beautifully meld into the seasoning.
Step 5
Once all the ingredients are well combined and cooked, pour in 1/3 cup of soy sauce. Stir and cook for about 1 minute to allow the soy sauce to infuse into the mixture. This step deepens the savory flavor.
Step 6
Next, add 1/3 cup of sugar for a touch of sweetness and 1/3 cup of salt to season. Stir well until the sugar and salt are dissolved, and cook for another minute. Balancing the flavors is crucial here.
Step 7
Now, add the star ingredient: 2/3 cup of minced garlic. Stir quickly for about 30 seconds to evenly distribute the pungent aroma and flavor of the garlic throughout the seasoning. Be careful not to overcook the garlic, as it can turn bitter.
Step 8
Finally, add 1 cup of gochugaru (Korean chili flakes) and stir everything together for about 1 minute. Cook briefly to incorporate the chili flakes, but avoid overcooking, which can make them burn. Turn off the heat. This completes your spicy and deeply flavorful Soon-dubu Jjigae seasoning paste. Let it cool completely before storing in an airtight container in the refrigerator. It should stay fresh for about a week.
